Hello my friends, 

We’re here, smack dab in the middle of July, in the middle of the most wild time.  How are you? How are we? 

I was on a camping vacation last weekend (thank you for all your kind words about last week’s no-post) which makes coming back to current news and circumstances a little bit more of a gut punch. It’s ok. We’re just going to stay hydrated, and vote, and eat our salads, and take our vitamins and keep it moving because the only way out is through. 

In weird and lasting quarantine hobbies I’ve taken up archery and I’ve learned how to throw a lasso (not while on a horse).  Ya know – might as well. I’ve also been the one-woman camera crew for an IGTV show I’m launching tomorrow.  I sweat over a cobbler. It’ll be worth the watch!  

I hope this finds you steady as can be. I hope you’re allowed to be slow today. 

The offering this week is below. Take only what you need. 

•  A long-expected turn for the worse.  I know it’s summer but we can’t be out here actin’ a mess.  (AP) 

•  There’s still so much we’re learning about his virus and this is not the time to be willy nilly without a mask ANYWHERE because Can Covid Damage the Brain? In line with other 2020 news it’s like… of course it can. (The New York Times) 

•  Confederate Statues Were Never Really About Preserving History. The monuments were used as symbols of white supremacy at times when Black were fighting for and under actual attack for their rights. Coincidence? No dude. No.  (FiveThirtyEight) 

•  I’ve always been fascinated with the Supreme Court and now is a very interesting term due, in large part, to Chief Justice Roberts. It hasn’t been perfect, of course what is in government, but it feels like Chief Justice Roberts is helping to keep the court above current politics.   The Political Genius of John Roberts (Slate) 

•  Are you going to delete TikTok?  Honestly I think I have always been looking for an excuse to.  (The New York Times) 

•  I’m out here trying to get someone to let me make a tv show and yet… We’re Going To Run Out of TV. Don’t worry. I don’t give up easy. (The Ringer) 

•  I don’t seem to be running out of television just yet – I’m watching the first season of 90 Day Fiance: The Other Way (woof some people really make their lives a wild ride) and the new Unsolved Mysteries which I devoured.  (Hulu and Netflix)

•  Handsome men in masks – we’ll allow it. (Elle) 

•  What to bake this week?  How about this Tomato Cobbler with Blue Cheese Biscuits?  It’s a classic from a few years back.  Like my camping adventures and camping menu, I’m feeling a picnic blog post coming up soon.

•  It’s that time of year when it’s just too hot for food. It’s not too hot for a Weelicious smoothie.  I love her pregnancy smoothie (nope, I’m not), this chocolate peanut butter smoothie (of course I add coffee), and I love her book Smoothie Project for every combination and add-in under the sun. 

•  Very much present and available for these 31 Vegan Meal Planning Meals from Food 52. I feel overnight oats in my future.

    Just been meaning to say I saw your recommendation for EVOO in Clovis…Enzo’s Table I ordered on line. OMG, so good. It is actually 1 mile from my step-daughter in Clovis also but because of distancing…we don’t see. I also got their Sun-dried Tomato Pesto and their Fresno Chili. They too…are delicious.

    Oh my goddess I love overnight oats! I was on a kick where I ate them everyday for breakfast. I’m into other things for breakfast right now, but here’s my recipe. 1/3cup oatmeal 1/3cup coconut creamer 1/3cup greek yogurt 2tsp chia seeds 1tsp ground flax sprinkle with frozen berry medly. In the morning I sprinkle a little cane sugar on top. So yummy! Oh, & yeah all ingredients come from Trader Joes. ?

    Hi Joy! Would it be possible to use the biscuit dough on the bottom and the tomatoes on top? Either way it looks delicious and I would love to make it when my tomatoes finally ripen!

    I agree it’s too hot for food, so I made the chocolate peanut butter smoothie for dinner. It tastes like a chocolate shake! Because of what I had on hand, I left out the cauliflower and used flaxseed meal instead of hemp. Also made it thicker by only adding 1 cup of milk. I’ll be making this often, thank you!

    Thanks for the articles and the reminders about the tomato cobbler…that is a recipe I return to every summer! (Also, been enjoying the You’re Wrong About podcast recommended a few weeks ago…listening to the whole OJ Simpson trial arc while running and baking…not at the same time!)

The thing is, you think you’re making enough for leftovers but somehow it’s all gone in one sitting. It’s that good. Recipe linked in the bio. Xo
I made these Almost Almond Croissant with a sheet I made these Almost Almond Croissant with a sheet of puff pastry and half a log of almond paste. Consider this a max volume weekend treat. ⁣
⁣
You’ll need:⁣
- A thawed sheet of puff pastry, fridge cold⁣
- 3.5 ounces or half a log of almond paste cut into 12 even-ish pieces⁣
- An egg beaten for egg wash, with a splash of heavy cream and a glug of vanilla bean paste for extra luxury⁣
- Sliced almonds⁣
- Powdered sugar ⁣
⁣
Lightly roll a sheet of puff pastry and slice into six rectangles. ⁣
Brush each rectangle with egg wash. Arrange each with two slices almond paste. Pull two corners of the puff pastry up and over the paste, pressing lightly to seal. Brush lightly with egg wash. ⁣
⁣
Transfer to a small, parchment lined baking pan and allow to rest in the freezer while the oven preheats to 425 degrees f. ⁣
⁣
Bake from chilled for 12 minutes. Remove from the oven and again lightly brush with egg wash. Top with almond slices and bake for 6-8 minutes more. Keep an eye as to not burn the almonds. ⁣
⁣
Remove from the oven and allow to cool slightly before dusting with powdered sugar and enjoying warm.
No hesitation. Marshmallows in every cookie. ⁣

Just tryna get the most cheese on my most simple s Just tryna get the most cheese on my most simple small-batch bagel recipe. Get in on this with me: ⁣
⁣
2 Easy No Yeast Bagels⁣
1/2 cup self-rising flour⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)
1 large egg, beaten for egg wash⁣
1/3 - 1/2 cup grated gouda or gruyere⁣
Everything bagel seasoning⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣
⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣
⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣
⁣
Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣
⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣
⁣
Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
