Friday is a dangerous day.

Friday afternoon, after a long week of words and dishes and more dishes and words… I feel very deserving.

I feel like I deserve a double cheeseburger with short ribs. ย I feel like I deserve a negroni or several. ย I feel like I should see how many Oreo cookies I can fit in my mouth… just so I know… in case anyone ever asks.

Maybe I am deserving of such indulgence. ย Maybe though… maybe I’m just eating my feelings a little bit. ย Real life. ย I’m just being honest.

Here we are staring Monday in the face. ย I’m ready for something green… and something a little less short rib-y.

A few months ago we talked about juicing. ย It’s totally a thing.

Takes some fruits and vegetables, mash them through a grind-y thing, drink the juice and hope it tastes good.

Today’s Apple Cucumber Celery Kale Gingerย Juice definitely tasted great! ย Not like short ribs… but that’s good, right?

Let’s talk green, and you don’t even need a juicer to do it!

Apple Cucumber Celery Kale Ginger Juice

Print this Recipe!

1 cucumber, sliced

1 apple, cored and sliced

2 heaping cups kale leaves, stems removed

3 stalks celery, greens and all, cut into chunks

juice of 1 lemon

1 inch fresh ginger, unpeeled is fine

Press all of the produce through a juicer. ย Enjoy immediately. ย It’s green! ย

  1. That sounds like my kind of juice. I was thinking recently that my green smoothies were a little heavy on the fruit. I will definitely have to try adding celery and of course I love the flavor that ginger brings!

  3. Joy — I noticed you use bananas a lot in your smoothies. Is it to make them creamier? Can I just omit it? I like to taste the greens a bit more and not a huge fan of banana. ((I made one from your cookbook and it tasted like banana and pb)). Thanks!

  4. Maybe I can bring myself to make one of these, so i can actually have some greens. Been having a hard time eating anything healthy since getting pregnant. Bread and Cheese seems to make up a majority of my diet, this could be a great addition! Thanks!

    I found this interesting because I am just starting to get into smoothies. I have one question though…I read that you cannot taste spinach in a smoothie when mixed with fruits and I want to know if that is actually true or not? Maybe I’ll throw some spinach in my next concoction.

  6. Love my morning smoothies. Today’s was DELICIOUS, surprisingly so. Spinach (lots), almond milk, 1/2 frozen banana and some frozen pineapple chunks. Playing mad-scientist first thing in the morning means I never measure, but yum. Need to buy more superfood powder (known as “dirt powder” in my house).

  9. I am amazed by the smoothie/juicing movement sweeping the nation. My dad told me he’s going to get one of those vitabullets. MY DAD.

    I am too lazy to clean up a blender or a juicer to make this a regular habit.

  10. The Kale Pear Smoothie is one of my all time favorites! It’s my go to when I need ma greens! And I’m totally with you on the Friday night eat-my-feelings. “it’s been such a long, hard week. I need the greasiest pizza I can stuff in my face!” That’s me, alright.

  11. I don’t have a juicer, I have thought about it, that as far as I got. I know I like juice, especially fresh carrot, that is my favorite. Seeing as I don’t have a juicer, I appreciate a good smoothie, even the double green super hero ones. I feel quite awesome when I drink those. And if it has lime in it to cut the bitterness, I am so down.

  12. Those are gorgeous colors, but my brain doesn’t think they are drinkable until they are red or pale yellow or some other fruit color (we’ll ignore that I know kiwi and honeydew and limes are all green fruits).

    I should try this anyway just to see if I can reeducate my brain, because I could use another way to get veggies into my diet.

  13. Speaking of using vegetables for breakfast, this morning I made your cookbook’s Carrot Cake Pancakes and cream cheese spread! Not quite as healthy as a green smoothie but pretty darn fantastic and worth the carbs ;)

  14. Tart elements like lemon, kiwi or ginger (or all 3 together!) are so necessary to make green juice yummy. I have been adding lemon and ginger to mine but you just reminded me I need to start buying kiwi again!!

    I totally get the Friday-Monday food preference shift. Friday all I wanted was meat and bad things. This morning all I could stomach was yogurt and granola…can’t wait to get back to my blender and start making smoothies in the mornings!

  16. Love kale smoothies; a friend of mine will simmer the kale, freeze it into cupcake holders, then throw the frozen kale into smoothies as the ice part. YUM.

  17. 1) Holla! You don’t even need a blender! I have one of those cheapie hand held stick blenders and it works wonders, too. So little to clean up.
    2) Pre-washed spinach in a bag is a green godsend.
    3) Grass powder added to my amazon wishlist for future spending.

  18. My favorite morning juice is a cucumber, apple, ginger, kale like this one.. The only difference is I like to throw in a jalapeno or two. It adds an amazing flavor kick!

  19. I did a 3-day juice fast last month and fell back in love with juicing, after not juicing for awhile and doing more smoothies b/c I hate dealing with juicer cleanup. Your juice combines some of my faves – ginger, cucumber and apple. I also love to juice beets and carrots. So pretty and refreshing looking!

  20. Wow the greenness looks so healthy and reviving. I want some!! I just got through my Monday (since the beginning of my work week begins Sunday). I could really use a glass of one of your greens to boost my energy as I head into the rest of the week.
