Wow y’all! Thanks for all the inspiration! You’ve certainly got my gears working. I’ve got summer berries in the works. I’m plotting some lavender goodness. And chocolate never goes out of season… does it!? Our tart pan winner is… drum roll…
Look at this! Bright! Shiny! Scalloped!
It’s a tart pan with a removable bottom. It’s pretty snazzy.
For some reason, it took me about 28 and 3/4 years to buy one of these pans. I thought these pans were for super fancy bakers that make fancy French style fruit tarts all day and all night.
It turns out… this 9-inch tart pan is our secret weapon against having to roll out pie crust. That’s right! Secret weapon.
With this tart pan all you have to do is throw together a dough and press it into the pan. Press. Not roll. Just like I did for this Strawberry Banana Cream Pie. Genius.

I know I’m late for this one – but I’m going to post my all-timefavourite apple-cinnamon-cupcake recipe anyways:
makes 12-20 cupcakes
For the dough:
150 grams of butter
3 dl sugar
2 eggs
2 dl flour
1 teaspoon bakingpowder
1 teaspoon vanillasuger
1 (big) teaspoon of cardamom
1 teaspoon of cinnamon
For the apples:
a small, sweet apple cut up into as many boats as there are muffins (if you are making a large batch, more apples might be necessary)
3 tablespoons cinnamon
3 tablespoons sugar
Preheat the oven at 180 degrees celsius
Melt the butter. While it’s melting, mix together the sugar and eggs in a large bowl until it gets white and foamy, and then pour in the melted butter. Add the flour and the spice, and mix it all together. Then pour it into your cupcakeforms.
Peel the apple(s) and cut it into as many pieces as there are cupcakes, and lay them in a bowl or plate, then pour over the sugar and cinnamon. When they are completely covered with sugar and cinnamon, put one in each cupcake form and cover with dough. Bake for 20 minutes at the top of the oven.

K so…I’ve always wanted to write you, so this is me doing that. A while ago, I wrote you a really long letter about how much my co-workers and I want to drive to LA to stock and meet you and get you to date our cat loving single friend. Right when I got the nerve to send it, I read a post that included news of a red headed boy in your life. The coworkers and I rejoiced for you but then we just got realistic and realized that the road trip to LA was plain creepy and I never sent the letter. Time has passed and I graduated from college and moved far far away from my joy the baker following coworkers. Now, since you’ve asked for inspiration, I’m wondering if you could bake something that you bake to de-stress and give tips about packaging baked goods so that they stay fresh. This way, I can send them something that I could say JOY THE BAKER made with them in mind. I would bake it, send it during their finals week and it would be fresh and delicious and posted by JTB (as you’ve come to be known by in our small circle). If that’s not specific enough, I’ve always wanted to know how to make shortbread ! :)

Following your blog for a while now and really enjoy your creativity and joy in the kitchen.
I’d love for you to make a cookie bar or tart or snack using sunbutter (made from sun flower seeds). I have a nine year old son who is highly allergic to soy,nuts,and fish with minor allergies to dairy, rice, chocolate and eggs. So I render organic leaf lard and use oils and oat milk for baking to make totally allergy free foods. When we bake a couple times a month with dairy and eggs it’s a splurge, but we haven’t been able to indulge with the much missed peanut butter.
My son is missing Omega-3 in his diet as well. Could you figure out a way to make a low egg and low dairy cookie or snack with sunbutter and flaxseed (omega-3)? No egg and no dairy would be a dream.

I LOVE your site and check it daily/obsessively. While I love to cook I am scared to bake and as a result I stick to the few recipes I know and love, one of which is your avocado pound cake and the other is my grandma’s banana bread. My Nana used to eat these raisin biscuit things. “Golden” something, they were called. They don’t make them anymore. I’ve found similar biscuits in some asian specialty stores, but nothing quite compares. Even better would be for me to make them myself…with your help :-)

I recently went to a nice restaurant where I had mint creme brulee for dessert. It was amazing!!!!! I normally dislike creme brulee, and I am not the biggest fan of mint flavors (besides thin mints) … so it was so shocking how good this mint creme brulee was (topped with some rasberries of all things!) I’ve been collecting quite a few recipes as of late that require a tart pan, like a Buttery Sage and Acorn Squash Tart, which I keep procrastinating on buying. If I got one, I might never leave the kitchen other than to buy more flour. That might not be such a bad thing!
How good are you with feta cheese? We always have some around the house thanks to the many local Italian stores and restaurants, but we always do the same things with them! Mix it in with a little pasta or have some with bread. I’d love to see something like a savory dessert or a quickie meal.

In high school my boyfriend’s favorite cookies (that I made) were Chocolate Orange Espresso Thins from Martha Stewart’s Holiday Cookie Magazine. All three flavors are distinctive in these cookies and they are silky smooth.
I have been wanting to try to deconstruct the flavors and texture (cause that is the best part) into a cheesecake or tart/pie type dessert.

It actually gets better as it sits and the tapioca soaks up juices. My theory is this improvement continues indefinitely, but in ‘how many licks to the center of a Tootsie Roll pop’ fashion, the world may never know. At least, it’s never lasted more than three days in my house.

Seeing as you are my all-time baking-inspiration, it’s hard to suggest something. But how about some kind of strudel? I know, it’s a very Austrian (Middle-European) concept of baking, but I’d love to know what you’d make of it. It doesn’t have to be a Viennese Apfelstrudel by the way, there are endless possibilities to make one. And I’d love to find out more about real strudel-dough (not the puff-pastry one). It always looks soooooo complicated, but I’m sure, you’d be able to make it look easy.

I made the most awesome fig tart in mine. I actually got one at a yard sale for free! I was looking at it and the lady told me…oh just take it, I never used it! Brought it home and washed it up and noticed it had pampered chef on the bottom!!! It even has a little rolly thing to press the dough into the fluted sides!!! FOR FREE!!! This may seem somewhat out of the blue, especially among all the cheesecake requests, but can you try…baklava? I made it once before, a few years back, using the recipe out of the Gourmet cookbook. It was seriously delicious and incredibly, unimaginably time-consuming. Since rhubarb is all over the place, I would say something with rhubarb. I’ve always wanted to make a cherry clafoutis but never have. Maybe you can make a rhubarb clafoutis. Is that possible, or does a clafoutis have to be cherry? Pick me, pick me, I’m dying to have a tart pan, but live in a tiny town and can only get quality cookware online, and I’m tired of paying extra for shipping.

You could go 2 ways. Something savory, like a quiche with some asparagus…mmmmm…and maybe some cheese and ham…or…bacon!
Or…you could go with something sweet like strawberries and marscapone cheese with a chocolate drizzle. Oh my, I am hungry now.
I have a tart pan, but I’ve never used it because it doesn’t have a removable bottom and I was always afraid I wouldn’t be able to get the thing out. Enjoy being creative this weekend! Can’t wait to hear how the brownie pie turns out.

How about a fresh fruit tart cake?
There’s a thin layer of sponge cake on the bottom followed by a top layer of either phyllo of puff pastry (sry I didn’t make this I ate it at a party.) It’s all covered in a butter cream that is not your typical butter cream b/c it isn’y overly sweet. And ontop of all that yumminess fresh fruit!Overall, this cake tart was DELICIOUS!
I would really appreciate it if you posted a recipe similar to this, so I can try it at home!

How about one with a really thick and gooey fudge center. I’ve never made one or even eaten one, but dream about it whenever I come across a recipe for it. One day I’ll just go ahead and bake it. As for a blog idea…have you experimented with cream puffs? Just to be clear, I’m not talking cream puffs with fluffy filling – I crave cream puffs with a thick, rich, vanilla custard type filling. Maybe drizzled with a little chocolate OR topped with some slightly sweetened, freshly picked strawberries (with juice running down the sides!) YUM. Don’t tell, but I’ve had new strawberry recipes penciled in on my May calendar for months now!

My request is that you bake something yummy but non-dairy, suitable for a kid to eat–like a cookie, bar or brownie. Why so specific, yet so vague, you ask? Because I’m hosting a group of families for a Big Sunday charity event, and I have to bake some treats for my volunteers. But two of the kids have a severe dairy allergy. I am a big fan of butter, so I never bake with shortening if I can avoid it. But I bought both organic shortening and some organic coconut oil, thinking I might make some substitutions. However, I’m not sure what might be good. Okay, I’m paralyzed. So I’m hoping you can give me some good suggestions–please?

A lot of lemon ice creams are tart and nearly taste like a sorbet, but at Ici, they manage to make the ice cream lemon-y AND creamy at the same time. It’s so delicious. I just got myself my own spring form pan. I used to use mom’s but I moved away. It wasn’t convenient to drive 1300 miles to get it. All my favorite spring form recipes just weren’t the same without mom’s pan. I love mine — it’s actually a square pan. So my suggestion for you – savory cheesecake recipes. I love cheesecake and love to go crazy creating clever crust and cake concoctions. Right now I am interested in a savory style. What have you got up your sleeve for me??? ;)

While I would love to win, I actually would rather see you make one of the two following items.
I am currently in the process of hunting down a great Orange Cake recipe. My plan: to make Orange cupcakes with Your amazing Cinnamon Cream Cheese Frosting (from the Red Velvet Cupcakes post). I cannot decide on a light and fluffy cake or the more classic dense moist cake. The plan is to recreate a Cinnamon Roll with Orange Glaze (a weakness my girlfriend has). So Challenge #1 make an Orange cake or cupcakes with Cinnamon Cream Cheese Frosting.
The second is not nearly as adventurous, but more important. My little sister is graduating from High School this June. I will be making her a cake and she wants a Yellow Cake with Real Strawberry filling and Italian Buttercream. I plan to use either the Best Yellow Cake recipe Deb posted on SmittenKitchen OR the Vanilla Buttermilk Cake in Sky High Cakes. I am very familiar with Italian Buttercream. What I need help with is making a great fresh tasting Strawberry filling.
So Challenge #2 make Strawberry filling, with a few restrictions. No gelatin (3 vegetarians will be eating this cake), NO dairy, and help deciding on whether frozen Strawberries will hurt the fresh taste. The worry I have is that the filling will seep into the cake and make it soggy without gelatin to help firm it up.
So my challenges are fruity…very spring appropriate.
I would really like any help you could offer, but would LOVE to see you make one of these items.

Ive been meaning to ask you if you have a great recipe for chocolate cinnamon cookies. There is a great little bakery here in Scottsdale that has this dense chewy chocolate cinnamon cookie that is fantastic but in all my searches I have never found anything that sounds similar. It’s thick, almost a full inch, as though they were dropped by large scooped ball but they dont really flatten out. Chocolate is so delicious mixed with cinnamon.

Sour cream raisin pie!!
Here’s a recipe:
Joyce’s Raisin Sour Cream Pie
Ingredients:
1 ½ cups raisins
¾ cup sugar
1/3 cup cornstarch
½ tsp. cinnamon
¼ tsp. nutmeg
2 cups milk
3 egg yolks (beaten)
1 cup sour cream
2 Tsp lemon juice
Mix first 6 ingredients together and cook over low heat till mixture thickens. Take small amount of mixture from pan and stir in slightly beaten egg yolks. Return egg mixture to pan and stir thoroughly. Stir in sour cream and cook just to boiling. Remove from heat add lemon juice. Cool and pour into baked pie shell, add whipped cream on top and serve.

A deep dark chocolate cake that is shortening free! I had jumbo cupcakes at my wedding instead of the traditional wedding cake, which I spent the day before making and until 3 AM the day of my wedding frosting! Priyaniki! They’re a Russian jam-filled cookie/cake-like thing eaten at Easter. I haven’t been able to either find or properly replicate them in the 7 years it’s been since I was in Moscow. They sold them on street corners and such. So delicious with a really nice honey flavor. Yum!

I had some fantastic ginger pear gelato yesterday, which makes me think that a ginger pear tart in such a pan as this would be perfect! I attempted one of these a couple years ago, and the crust was “rustic” at best. It looked like I had baked it over a wood fire in a small hovel somewhere in Eastern Europe about two centuries ago. But boy did it taste good! I’ve been told that’s all that matters…I suspect, however, that is a clever way of saying “Looks like a four year old made it, but we’ll eat it anyway”!

‘d love for you to make Snickers Pie! And I don’t mean a pie with bits of Snickers throughout. Where I work we have a snickers pie, and it’s divine! I’d love to make it at home. It’s a pastry crust, a soft, chewy chocolate layer with peanuts (I’d have to leave those out with a nut allergy) covered with a cheesecake type layer (It may have some caramel in it, I’m not sure, it’s wonderful though!), topped with a chocolate layer and decorated just around the edges with peanuts and caramel. Oh, if you could do that, I’d be in heaven!!

I love, love, love chocolate, but I can no longer have it due to an allergy I’ve developed. I miss brownies more and more each day. I’m often tempted to steal a brownie even though I know it’s a really bad idea. The problem is, I haven’t found a decent non-chocolate brownie (a blondie, I believe) yet. I like to make a fruit pizza-type dessert! but, instead of a sugar cookie crust with cream cheese icing, I make the Baked brownies in a jelly roll pan, then have a dark chocolate mousse.. covered with lots of fruit (strawberries, kiwi, bananas, green and red grapes, blueberries, raspberries, and blackberries.. my favorite combo is oddly the kiwi!) my friends all go absolutely crazy.. it’s such a tempting, evil dessert. so much chocolate, but so much fruit! You should make a German Chocolate Ganache Cake. I remember baking one at Algonquin College in Ottawa, Canada when I took the one year Baking Techniques course. Best. Cake. Ever. Rich, moist, intenseley chocolate. I took it home to my roommates and we at the entire thing that day, no shame in that.

Oh, pretty please figure out how to combine lavender with lemon flavors! I had a lavender lemonade YEARS ago at Moby’s tea room in NYC and it kind of blew my mind and now lavender is my favorite taste, but it’s so difficult to find things that use it! I went to a little bakery once and had the most amazing piece of pie. It was a Banana Cream pie and it also had a thin layer of melted chocolate along the top of the crust, slices of bananas and peanut butter mixed in there some how. i like many of your readers have pushed this baking pan to the back of the line in a long list of wanted tool. and it’s so sad because whenever I am flipping through my cookbooks and I see a tart recipe I skip it. Sure I could push it in a pie pan, but then the tart won’t pop out like it would (or so I imagine) from the pie dies and no pretty great for presentation fluted edges.

My grandmother use to make an egg custard and she would have it in this amazing old pie safe type cabinet in her kitchen. It was the best treat. I haven’t had one as good since she passed. I’ve looked for a recipe but the ones I’ve tried just aren’t hers so I’d like to see your take on egg custard please.

Oh I’ve been wanting a full size tart pan – I got a set of 6 mini ones for Christmas but haven’t been able to use them as much as I want because every time I want to make a tart it would be much more convenient to have the full size pan.

hummm ok… this! a long time ago I did a sour cream chocolate cake… it was made with cocoa.. so! the thing is, I lost the recipe; but! maybe you could find one and bake it… The cake was ultra good but no too sweet and that made it perfect.

I am always looking for Mexican pastry recipes that do not use shortening…so my idea was how about some empanadas of some sort…you know the little pockets that are filled with some type of fruit. They are so easy to grab and go in the mornings when getting the kids off to school. I love the traditional ones with pumpkin, but I am sure you could give them a great modern twist like plum or mango. I am sure I would love them just the same.
P.s. I couldn’t wait to make your strawberry banana cream pie but didn’t have a tart pan….so last night I made it in a pie plate. :) It was delicious anyways. Gonna go have some more for breakfast. :)

I just (finally) bought a tart pan too. This after 36 1/2 years! I have used it once now and loved it. I used it for a basic cheesecake. I also just saw (though I don’t remember where) using a medium sized bowl turned upside down to remove the outer ring from a hot pan… placing the tart on the bowl and then allowing the ring to drop down…

I’ve just noticed a couple of people have said this already, but please try some macarons. I attempted them last weekend- I left the egg whites to age and everything. My first batch were very thin meringue wafers, the second were like almond biscuits. I was disappointed in myself, and need to find the in-between stage. I’m leaving it a while for my next attempt, but I half blame the recipe (I won’t mention which blog it’s from!) as the instructions were not 100% user friendly. I know you could help us!
(PS I live in England, so don’t worry about the tart pan, even though it is lovely and shiny!)

I think a Scandinavian Apple Torte, in the beautifully scalloped tart pan, would be wonderfu!! A butter cookie crust, cheesecake filling and and an artfully arranged topping of sliced apples, almonds and cinnamon. Brushed, at the end, with melted apple or apricot jelly…wow!
Or, if you are in the mood for something savory, how about a vidalia onion and goat cheese tart on puff pastry? That pan opens many doors!! Looking forward to seeing what you create next. And many thanks for your inspiration.

I’m not going to lie, ever since I read Amelia Bedelia as a child I have been dying to make (and eat!) a delicious lemon meringue pie. I have never tried one but somehow I know in my heart of hearts that it would be wonderful. Can you make my childhood fantasies come true??? i came on to tell you that next friday is my birthday, and i have already planned on making the rootbeer chocolate again. oh. my. god. soooo amazing!!! and you’re totally right- it’s much better the next day, after all the flavors have a chance to settle in. so my friend margalit is coming over on thursday to hang out with me while i make it so that all my guests the next day get it at its peak.
in terms of YOU making something, my friend margalit, who knows how much i love coconut was asking what kind of coconut cake i wanted. so i was going to suggest that you come up with something magnificent. as you always do.

I was so sad when I started reading all these hints that you guys weren’t together anymore, like when you were talking about your bunny slippers that would keep you single for eternity. and i forget now, but i even read through your posts again to find other comments like that. and i was like ‘KEEP?!?! what’s going on here??” but now i know that you are in the process of wooing this red haired boy (which means he has probably wooed and won you, at least for the time being.) and i’m all about that. i just liked simon. especially since he seemed to make you happy. hopefully this red haired boy will make you happiER, or some other boy will, or lack of boy will, but… WHOA that got pretty serious. but i was just going through my own boy things, and… i just want you to know that i want to talk to you, always. and that i think of you when i’m going about my day (that’s not weird, is it? maybe. but in real life i’m not too creepy. and you share a lot in your blog, and it makes me want to share a lot with you.) and that i used ‘holy heck’ on my birthday invite, and thought of you, and it made me giggle. i’d never said it before. ever. anyway, i just wanted you to know that you’re pretty freakin awesome- and you make me giggle all the time.

OOH, I know what I want you to bake… Grape pie!! For Serious! I’m going to attempt one this weekend. I haven’t made one for like 10 years but I have all these grapes… it’s a long story, lol.(think work party + women who don’t eat + 500 little cups full of grapes left over + me, I’m the grape rescuer!)
I made this pie ten years ago when I lived in a house with a backyard full of grape vines. The grapes weren’t sweet enough to eat but we had SO MANY that we had to do something with them. SO… we looked up an old recipe, grape pie. We made 25 pies!! All those grapes… but WOW, what a flavor. And they freeze beautifully. Amazing. Here’s the recipe. YUMM.
Concord Grape Pie
Ingredients:
4 1/2 cups Concord grapes
1 cup sugar
1/4 cup all-purpose flour
2 teaspoons lemon juice
1/8 teaspoon salt
1 unbaked pastry shell (9 inches)
***STREUSEL:***
1/2 cup quick-cooking oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
1/4 cup butter or margarine
Directions:
Squeeze the end of each grape opposite the stem to separate skins from pulp. Set skins aside. Place pulp in a medium saucepan; bring to a boil. Boil and stir for 1 minute. Press through a strainer or food mill to remove seeds. Combine pulp, skins, sugar, flour, lemon juice and salt; pour into pastry shell. Combine oats, brown sugar and flour; cut in butter until crumbly. Sprinkle over filling. Cover edges of pastry with foil. Bake at 425F for 15 minutes. Remove foil; bake 20 minutes more or until golden brown. Cool on a wire rack.
**we used the most flavorful grapes, even though they were super tart, they make a terrific pie**

I have been madly trying to find/develop a recipe for this breakfast biscuit i had years ago. Basically it is a bacon and egg biscuit but it is all baked together.
Biscuit pastry in the bottom of a king size muffin pan a cracked egg and some Canadian bacon and more biscuit mix on top. Then baked….. sooooooo gooood. But I can’t replicate or find it anywhere else. I would love it if you could help.
