Have you ever had one of those days where you’re driving along, battling traffic, trying to let Kelly Clarkson lull you away from outright rage… and it’s totally not working… and you’re about 4.7 seconds away from deliberately smashing your car into the Porsche in front of you? You’ve probably never had one of those days. You’re a better human than me.
If you are familiar with these sorts of days, the solution would look something like this: abruptly pull your car over into a shopping mall, buy yourself a cheap maxi dress, change into new dress in the car, walk to a drugstore, paint your nails in the cosmetic section, purchase a package of Peanut Butter M&Ms and a purple juice for a homeless dude, walk back to your car, put on fresh lipstick, and carry on.
Can this be the only traffic jam I encounter for a bit? A cluster of lemon, poppy seeds, and blueberries… less Porsche, more butter.
These muffins are full of everything I ever want (except meatballs and chocolate).
Browned butter, citrus, summer fruit, and sugar! I have love in my heart.
I also try to put a crumble topping on just about everything (except cheeseburgers).
These muffins feel like weekend brunch wonders! They’re a perfect mixture of Blueberry Muffins, and Lemon Poppy Seed Muffins. Smash bang! I also love to make these during the weekend, and freeze any leftover muffins for weekday morning treats.
Lemon Blueberry Poppy Seed Muffins
makes 12 muffins
adapted from the Joy the Baker Cookbook
7 tablespoons unsalted butter
1/3 cup whole milk
1 large egg
1 large egg yolk
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1 tablespoon lemon zest
1 tablespoon poppy seeds
1 1/2 cups fresh blueberries
For the Topping:
3 tablespoons unsalted butter
1/2 cup all-purpose flour
3 tablespoons granulated sugar
Place a rack in the upper third of the oven and preheat oven to 375 degrees F. Line a muffins pan with paper or foil liners, set aside.
To make the muffins: Melt butter in a small saucepan over medium heat. Keep an eye on the butter. It will melt, froth, and begin to crackle. That’s the water cooking out of the butter. The crackling will subside and butter will begin to brown fairly quickly. Remove from heat when butter solids become a medium brown color and butter smells slightly nutty. Immediately pour hot butter into a small bowl, or the butter will continue to cook in the hot pan. Allow to cool slightly.
In a medium bowl, whisk together milk, egg, yolk, and vanilla until combined. Add browned butter and whisk to combine.
Whisk together flour, sugar, baking powder, and salt in a medium bowl. Add milk mixture all at once to the flour mixture and stir gently to combine. Gently but thoroughly fold in the lemon zest, poppy seeds, and blueberries. Divide batter among prepared muffin cups.
To make the topping: Combine all ingredients in a bowl and rub together with clean fingertips until crumbly. Sprinkle topping evenly over the muffin batter in cups.
Bake muffins 18 to 20 minutes until golden and crisp and a skewer inserted into the center of a muffin comes out clean. Cool muffins in the pan for 15 minutes before removing. Serve warm or at room temperature.
Muffins will last, at room temperature in an airtight container, for up to 3 days. I like them best the day they are made.

is it ok to add lemmon juice to it or would it react with the milk com compromise the batter?
I added 1 tbs and a half to the wet ingredients, but my batter took twice the amount of time to bake and a lot of the butter passed through the paper liners. Was it the lemmon juice fault? Thanks so much for you time and wonderful recipes.

I have an unnatural love for the blueberry muffins from Bouchon, but their (laborious) recipe is a commitment. Like, a two day commitment.
Try the Bouchon crumble topping though… You can make a batch and keep it in the freezer. It makes enough crumble for 5 batches at least, simplifying the baking and cleanup.

Lemon poppyseed is my FAVORITE kind of muffin. I can only imagine that blueberries make it so much bettter.
I love your idea of shopping rather than sitting in traffic. One time we were stuck in Chicago rush hour on our last leg of a drive from Boston back to Wisconsin, and my dad said the hell with it, pulled over, and we all went shopping and ate…at the Cheesecake Factory. I think that was one of the last times I ate there though. It will not be the last time I stop and shop during rush hour though. Except here in Japan rush hour means being crammed on a train and sweating with a bunch of strangers. Nowhere to shop. Just a little bubble of imagined personal space with me and my iPod.

So I made a double batch of these today. They turned out well, in spite of me forgetting to add the sugar until everything else had been put together. The real problem I had was that the blueberry juices made some of the liners stick to my muffin pan, so I butchered a few digging them out. T_T Not awesome, since I’m giving them as a gift. I’ll have to prepare for that next time.

1). YES, I am a homicidal maniac behind the wheel after 20 minutes of sitting in LA traffic, so you get me.
2). You know exactly how to make me recognize and laugh at my own bad behavior… waaaay better than Kelly Clarkson ever will.
3). Your recipes could make me forget anything unpleasant in a split second (although too much brown butter will have my thighs reminding me I ate too many of them).
4). Those blueberry muffins remind me of my Aunt Matilda’s muffins when I was a wee one (a trillion years ago).

How do you freeze your muffins? I usually put mine in a Ziploc, but then they get coated in frost and ice crystals and are therefore soggy when I defrost them. Gross. How do you recommend storing them?

I store them in ziplocks as well. A little reheat in a low temp oven helps dry them out a bit once they’ve defrosted.

Stopping at Peanut M&Ms would be doing a dis-service…I’d say you’d need some sour cream and chives chips, too! Traffic and I are not bosom buddies and probably never will be so I can say with honesty that I’ve shared the same fantasy of smashing into the Porsche in front of me, especially in the SF bay area and L.A. Important thing is M&Ms and cheap dresses are always there to console. GREAT muffins! I still haven’t baked with poppy seeds – need to hop to it!

These sounds amazing!!! But I have a huge surplus of raspberries… so instead of blueberries I will try out raspberries *drools*. One thing though, me and my 3yr old daughter are lactose intolerant and I haven’t ventured out much in baking with soy/almond/coconut milk over cows milk. But you know what, baking is totally the cure! I have an exhibitionist 3 year old who won’t put any clothes on and a 5 year old that’s too cool to do what he’s told – solution: I’m gonna bake some bread, then some individual tarts for dessert (hey it’s friday) and my sister is going to India for a couple months tomorrow so I’m gonna bake a cake – thinking your big berry (not) birthday cake!
Then when the kitchen is cleaned up, I’m gonna move to stage 2 of the ‘rage control’ process – eating!
