If I were a bran muffin on a bakery display shelf I would probably have blueberry muffin envy.
Blueberry muffins are like the cute blonde girl next door. ย The girl that every boy likes in the sixth grade.
Bran muffins are more like the girl in the sixth grade with frizzy bangs, big teeth, giant feet and loads of…. potential. ย Seriously! ย The last thing you want in the sixth grade is potential. ย Lame. ย (If you can’t already tell, I’ve painted a picture of my sixth grade self for you. ย I was tragically hilarious and full of… stinkin’ potential.)
Blueberry muffins are like cupcakes. ย With fruit. ย For breakfast.
Bran muffins… have a great personality… if you know what I mean.
But these Raisin Bran Muffins? ย They are sorta like a secret weapon. ย Like the ugly duck turned swan. ย Like the unfortunate looking sixth grader who got kinda cute in her late twenties. ย So there! ย Take that sixth grade blueberry muffin blonde!
Woooow. ย I can’t believe I just wrote that. ย Furthermore… I can’t believe you just read that. ย Apologies and thanks.
There are two things that make this muffin a secret weapon.
One: ย they’re made with Raisin Bran Cold Cereal. ย Super easy. ย Super yummy.
Two: ย the batter can be made ahead and kept in your fridge for a week. ย The best part is that the muffins are even better a few days after the batter is made. ย Yum. ย Fresh muffins every morning. ย You win!
Raisin Bran Muffins
makes about 20 to 24 muffins
1/2 of a 15oz box of Raisin Bran Cereal
1/2 teaspoon salt
2 1/2 cups flour
1/2 cup vegetable oil
1/3 cup brown sugar
2/3 cups granulated sugar
2 eggs, lightly beaten
1 teaspoon vanilla extract
3/4 teaspoon baking soda
2 cups buttermilk
In a large bowl mix together Raisin Bran, flour, salt, sugars and baking soda.
In a medium sized bowl, whisk together oil, eggs, vanilla extract and buttermilk.
Whisk the wet ingredients into the dry ingredients. ย If you plan on baking the muffins right away, allow to sit on the counter for 45 minutes before baking. ย This will allow the cereal to soften.
If you’d like to bake the muffins throughout the week, place the batter in an airtight container and store in the fridge. ย Scoop into lined muffins pans when ready to bake. ย Sprinkle with a spoonful of granulated sugar if desired.
Bake at 375 degrees for 15 to 20 minutes, or until a skewer inserted in the center comes out clean.

I just made these, they really are moist and amazing. I made them exactly how you wrote the recipe. No problem, perfection. Thank you for sharing the recipe. This recipe reminds me of the bran muffins I had years ago when I was in the hospital after delivering my baby. That was the only bran muffin I thought was truly moist and tasty until now. Great recipe.
The muffins were delicious! Baked 6 tonight and we each ate 3. I used sugar in the raw on top for some crunch verses regular sugar. After seeing a โJoy the Bakerโ recipe, that was the one I wanted to use. Thank you for all your great recipes.
Wow, here is my Six-Week Bran Muffin recipe, cut in half. Made these for years, and true to the name, the batter is good for six weeks in the fridge,
I am so happy to find this recipe. My mom used to make these when I was a kid and I loved them. Now I make them for my kids and they love them, too. I find, though, every time I make it that I have to add at least another cup of liquid to get the right consistency. The flour plus the cereal is just too much dry for the wet, the way this recipe is written. OP, have you tested this to be sure you transcribed the measurements correctly? Either way, thanks for sharing.

Joy, I have to tell you my cousin gave me this Raisin Cereal muffin recipe and said it was her grandmother’s. It is the nearly exact recipe “doubled.” She does not use brown sugar. I decided to look it up and here it is. HA! My cousin is 71 years old and her grandmother lived to be 107 years old. She has been gone for over 10 years and was in a nursing home for 10 years obviously not baking. I shall never tell her I looked it up because it would hurt her feelings. I’m guessing it was on a raisin bran cereal box at some time. Probably improved by you and others. Anyway, I am baking your recipe because it would be better with brown sugar and the vanilla. My cousin does not use vanilla either.

Oh man, are these good. You can’t go wrong with tons of buttermilk and some brown sugar.
I had bought a 25 oz. box of cereal, because it was on sale… well, ok, because I didn’t read the amounts in the recipe, just the ingredients. But it *was* on sale. Anyway, I raced around looking for our food scale, and instead decided to wing it with the Raisin Bran. I ended up using 4 1/2 cups of cereal and it worked great. Just an fyi for anyone else who gets the wrong sized box!

Great muffins, Joy. I switched it up a little and substituted whole wheat flour for white and omitted the white sugar entirely using just 1/2 cup of light brown sugar. In addition I sprinkled cinnamon sugar on top. Yum!
I guess I’m the odd man out here. I just made these muffins and I’m completely disappointed. Although they’re fully cooked, they’re gummy, kind of lacking in flavor and every last one of them stuck to the paper muffin pan liners. Any idea where I went wrong? Also, I’m selling 2 dozen mutilated muffin stumps on the cheap if anyone is interested.

I’m making these for the second time now, although here (Australia) they are Sultana Bran Muffins. First batch went into freezer and zapped in microwave to defrost and reheat them, made a great after work snack. This time around I mixed cereal into batter instead of into dry ingredients. Last time I ended up with floury cereal flakes and some small unmixed blobs of flour, but muffins were still good :)
These sound perfect for my 4 year old… he loves blueberry muffins and eats dry cereal straight out of the box… just wish I could see the pictures – doesn’t seem to work on my laptop :-(
I have exams this week, but instead I stay up until midnight looking up good muffins to make that I probably wont have time for in the next three weeks. But your commentary makes it all worth it.

I made them, and I like the subtlety of the muffins. They were tasty and slightly sweet–and tasted healthy at the same time.
I had to comment and thank you for this recipe. My two year old little girl LOVED these muffins, and she is very picky. They were delicious, and not overly sweet. We had muffins all weekend! I make banana bread w/ raisin bran cereal. It is great. I love the raisins in the bread. I made a carrot cake once and added a cup of raisin bran to it. It is fabulous too. I am a great experimenter w/ raisin bran.

When I saw “raisin bran” I thought it was going to be a plain old bran muffin with raisins in it. But this looks way better than that! I might have to try these soon. :)
If breakfast could always look so scrummy then getting out of bed would be much easier. I wonder how rice bran would work since I can’t have wheat. Nonetheless, I’m happy everyone else will have a yummy start to the day!
I made these with whole wheat flour and reduced teh sugar by 1/3 cup and they were nice and tasty. Wholesome and filling and let me delude myself into thinking I could eat 5… I think next time I am going to add just a bit more buttermilk to help with moisture. They were fabulous straight out of the oven with butter but as they cooled a bit they were just a tad dry. I probably overbaked a few minutes and I did reduce the sugar. But still delish and I am whipping up another batch right now. Thanks!

Here in Utah we have what is called “Mormom Muffins”. They have buttermilk (I know… another reason to love buttermilk!) and bran flakes and bran buds, walnuts and I put raisins in also. This batter will last 6 weeks in the fridge (it makes a hugs batch!) and as yours tastes better the longer it sets. It does get a bit darker in color too! Holler if you would like the recipe!

I think I ate so much grainy-brany-oaty stuff when I was a kid that I had no chances of being anything more than a bran muffin kid, literally and figuretively. Not only did I envy the blueberry muffin girls, but I had a hellofa hard time getting the few “blueberry-brans” that I ran with as a kid to do sleepovers at my house for fear of being fed grape nuts in the am, while watching PBS! I too had potential they told me, thank god they were right.

I was totally a Bran Muffin in sixth grade. Oh and I didn’t even know it. How sad! Overall shorts with only one side hooked up, glasses (before they could make the lenses thinner than what you needed), slick ponytail everyday, and braces. Not just braces, I had to wear head gear to school. Social suicide!

Oh, bran muffins. They actually do taste good, and I enjoy eating them. But that name? Kind of sad.
Someone once described me as “wholesome” (which is not really a BAD thing, but…) and I remember walking around for days thinking, “Ugh. I’m just wholesome. Just a stupid bran muffin.”
So maybe the image of the bran muffin isn’t sparkly pink and beautiful, like the blueberry muffin or a meyer lemon muffin or something that oozes of fun, but it sure is a good little muffin.

I’ve learned to loathe the word “potential” lately. When people say something has potential they often mean they think that thing is craptacular but *might* be awesome if you work hard. That’s the word people keep using to describe the older home I just bought with my husband. Sure it’s not perfect, but I think it’s pretty awesome now! Sorry, little rant. I’m sensitive about my awesome home’s feelings. :)

I was a bran muffin! I HATED being told I had potential. And my friend Heather was such a bluberry muffin, it killed me. Oh, Joy, you have a way of making the world very clear! But ya know… I always want the bran muffin over the blueberry muffin now that I’m a grown up, so I guess it’s a good thing. Just don’t tell my junk-food addicted husband that he chose a bran muffin for a wife!
I just realized that the reason I’ve never made homemade bran muffins (which I LOVE) is that I’ve never wanted to buy a box of plain bran cereal just for muffins. But Raisin Bran I very often have on hand and would buy without hesitation to make muffins. These may be making an appearance in my kitchen this weekend! Thanks so much, Joy!
omg! bran muffin 6th grader right here! except my parents somehow managed to brainwash me into thinking that it was cool to be a bran muffin … even if it meant buck teeth and stirrup pants with a men’s size shirt (don’t forget the t-shirt clip! remember those?) pulled to a t-shirt ponytail over them. I envied the blueberry muffin girls, but was either deluded enough (or, remarkably, self-confident enough) not to care about my dorkiness.

I ADORE this post for several reasons:
1. I have a secret love for Raisin Bran and if I have it in the house am likely to devour an entire box in one sitting.
2. Your description was TOTALLY me in 6th grade. Frizzy curls, glasses, oversized glass and oversized sweaters, tripping over my pigeon-toed feet in gym class, getting straight A’s but wishing I was the cute blond-oh yes, I know that feeling.
3. My husband loves my curly hair and my bran muffins, so potential ended up being a good thing!
Sixth grade.. oh boy! don’t we all want to forget what we looked like back then? all i’m saying is bowl cut, braces, a bit of puppy fat and dungarees… O.M.G.! ;P uuggghhh and now you know, too!

My husband does most of our grocery shopping now. That’s usually a good thing, but, sometimes I end up with way too many good deals vying for cupboard space. One of his recent too-good-to-pass-up deals was Raisin Bran. We’re empty-nesters, so won’t eat through those 5 boxes very quickly. This gives me something to do with one of those boxes. Thank you for recognizing the inner Hermione Granger in all of us! And for bringing this recipe down to a reasonable size (my grandmother and Courtney’s must have used the same recipe) for all of us.
My grandmother just gave me her recipe for these but the batch is three or four times larger and claims that the batter can live in the fridge for up to one month! There are a few things that have kept me from trying my grandma’s version: 1. That’s A LOT of bran, and 2. A month? Really?! Is that safe? My grandma has been making these for the better part of 40 years so I guess I’ll trust her. (I’ll probably be trying yours first, though).
i know! i’ve seen recipes that are GIANT and say they can be kept in the fridge for 6 weeks. Um…. ick.
Ha! There are others out there who know the secret to awesome ‘bran’ muffins. :) Your recipe is very close to one that we *cough* my grandmother makes for all brunch dedicated holidays. She is stingy with her recipe, I’ve only seen it twice…in 30 years.
One of her short cuts, if you forget that you needed to make the batter ahead…use slightly warmed up milk (she uses straight milk) and pour it over the cereal – instant sog. :)
Ok, I am so off to try this recipe. (Though I don’t think this is what my college age nephew will think of as treats…hey its portable…!)

am new to yr blog but i enjoy reading yr recipes. this sounds very good, only from where we come we dont get raisin bran cereal. so what would be a good substitute ?
well… the whole point of the muffin is the bran cereal. anyone have any suggestions?
you must have SOME kind of bran cereal right?? any kind of bran flakes? whole grain flakes? i’d be surprised if you didn’t! if you do, you could just use those, and then add in raisins?

I too was a 6th grade bran muffin and am now the mother of a 6th grade bran muffin – thanks for reminding me how unappealing potential is at that age. I’m going to stop going on and on about that. I’m also totally going to make these next week. What better to fortify her for a day in the trenches with all those blueberry muffins.

If this is the same recipe that I have (and I’m not going to go double check, but I’m pretty sure it is), then the can be kept in the fridge for more than one week—more like three, four, or even five weeks. Not that it ever stays there that long…
yes… some recipes say that you can keep the batter in the fridge up tp six weeks… with all the milk and eggs though, that kinda weirds me out. if it doesn’t weird you you… go ahead and leave the batter longer than a week!

Yes, having worked at a cafe I can honestly say that the blueberry muffins were always the first to go, leaving me with cold leftover bran muffins to take home after closing.
Now these are bran muffins I would be excited to bring home.
