Spinach, today! is totally going to be the name of my new and forthcoming vegetarian zine. ย I’m getting into the zine business… with spinach. ย It’s super niche. ย Ok… that’s not true at all.

I’ve got a whole brain full of buttery (and peanut buttery) treats I want to make in the next few weeks… but I really should clean out my crisper first.

I’ve got spinach for days… so I’m eating spinach for days.

Here’s how it’s going down the hatch:

And Barbecue Buttermilk Onion Ringsย with red wine for dinner. ย Totally not spinach, but a girl has got to live!

Spicy Spinach Pasta

serves 2

Print this Recipe!

3 cups cooked gluten-free spiral pasta

1 heaping cup baby spinach leaves

3 tablespoons roasted and salted sunflower seeds

1/4 cup grated parmesan cheese

juice of half a lemon

olive oil

salt, coarse cracked black pepper, and red chili flakes to taste

Let’s keep this as simple as possible. ย Boil and drain pasta. ย While pasta is still hot, toss with spinach, sunflower seeds, cheese, lemon juice, a healthy dose of good olive oil, salt, and two types of pepper. ย Toss until spinach is just slightly wilted from the heat of the pasta. ย Divide between two bowls, sprinkle with a bit more cheese and serve.

  1. Whoa, craziness! I just posted my recipe for black sesame cocoa brownies with salted caramel ganache and black hawaiian salt this morning. Apparently chocolate, sesame and salt are a winning combo today ;) Those cookies look droolworthy

  2. Had the pasta for supper – it was PERFECT!!!! Toasted the seeds in a pan while the pasta was cooking, a little browner then usual, and it was just right.

  3. I am a super spinach freak myself. My favorite spinach salad is fresh spinach, with a squeeze of lemon, drizzle of almond oil, freshly grated nutmeg, and salt and pepper. I then put a poached egg (or 2) on top! The egg yoke mixes with the lemon and coats the spinach…oh so yum!

  4. I just got all the ingredients this afternoon for the Spinach Smoothies and I’m going to make my first one in the morning. =) I’m starting the Couch to 5-K program next week so I felt like I should try to get a little healthier!

  5. hey i am on a spinach kick too! tonight i made spinach soup, and for breakfast it’s spinach smoothies. i’m thinking about upgrading to kale next week. but first i want to make this pasta! also looking forward to your buttery treats…:)

    I’ve been making that smoothie for the past week minus the green powder, it is so yummy and a great way to get your dose of fiber!

    Your anecdotes seriously do make me feel as though you are a kin spirit. And then we get into the food and I just know we are birds of the same feather.

    For the gluten – free birds out there. Chana – chick pea – garbanzo (whatever you may call it) makes AMAZING sexy outrageous (is this a madonna song?) onion rings. Whud up. That’s what.

  10. Seriously, if you came out with a veggie-zine I would read it. No joke. I would totally subscribe. As long as you did some vegan recipes, too. Which you would, cause you’re awesome. Ok, I’ve officially gushed for far too long about an imaginary magazine. Carry on.

  14. I totally do this (the pasta) for dinner more often than I care to admit! Except I usually like to throw in some sun dried tomatoes because, well, how could that not be awesome? And sometimes some white wine sneaks in there. Sneaky wine.

  15. I have never thought of using sunflower seeds in a pasta sauce. But now I know better! I have a ton of it and this would be a great use for those babies!

  16. Popeye would be proud :-) Apart, maybe, from the onion rings for dinner, but who cares, they look incredible! I can’t get enough spinach – it’s delicious baked into English muffins too and makes them a beautiful pale green colour.
