Can I be honest? This week was a bit of a doozy. It kicked my ass. I flailed back. It wasn’t cute.
In response, I made us popcorn. It’s sweet and spiced, and makes a totally acceptable dinner. Add wine and a few episodes of Boardwalk Empire and I suspect we’ll all be back on our feet in no time.
Oh! I feel like we could use some mental popcorn too. Here are so links to feed your brain while you eat popcorn. Also, if you eat popcorn by placing your entire face in the popcorn bowl and eat whatever sticks to you tongue… you’re a friend of mine.
The Internet is forever new. I love a new site called PUNCH. We are what we drink, so let’s learn more! The cocktail recipe section is gorgeous and ample. I also totally enjoy these pieces about Kentucky Moonshine.
I’m going to see the movie 12 Years A Slave as soon as I can muster up the energy to be destroyed. This review by David Simon has some really thoughtful words in it. I’m in.
Big Mother Is Watching You is an interesting article about how you can use technology to spy on your kids… but you totally shouldn’t. If my parents had the ability to spy on me in the mid-90’s… I would have had a lot less fun in AOL chatrooms. #imnotwrong
Ooooh how we are spied on. On the press, the leaks, and the really bold work of Edward Snowden. It’s crazy.
Lastly, PUMPKIN COFFEE CAKE!
Popcorn recipe after the jump!
Cinnamon Kettle Corn
makes about 6 cups
3 tablespoons coconut oil
1/3 cup corn kernels
2 tablespoons granulated sugar
1/4 teaspoon ground cinnamon
sea salt to taste
In a medium saucepan with a tight-fitting lid, place the coconut oil. Place over medium heat and allow to melt. Add the corn kernels and sprinkle with granulated sugar. Place the lid over the pan, keeping the lid slightly ajar. Allow popcorn to begin popping. Once or twice, cover the pan completely, and use pot holders to lift the pan and shake it. When popping slows, remove from heat and sprinkle in cinnamon and sea salt to taste. Shake into a bowl and serve immediately.

And, of course, she gave you an option so that
you didn’t have to watch it. But that still wasn’t good enough for you.

Hello Joy. I finally introduced myself to you and your kitchen on your latest post – bidding au revoir to your much blessed home. That said, I was/am overdue in commenting on this very recipe. So wonderful! I shared it on my blog and made sure to give you full acknowledgment. I do hope my readers have found their way to your beautiful kitchen or find their way soon to your new one. I certainly can’t wait.

OMG!!!! Joy, I thought your kettle corn recipe was the best the popcorn on earth, but this…..THIS!!!!! I don’t know how you did it, but it’s even better!!! Definitely my absolute new favorite popcorn recipe. Nothing is better!!!!
Greg
I made the cinnamon kettle corn. Learned that “sprinkle the sugar” is important, i.e. do not pour it over the kernels and hope it coats well. It also does not require much salt or it masks the subtle sugar taste, just like real kettle corn’s flavor has a hint of salt at the back not front-and-center.

Ha! I made salted caramel popcorn last night annnnd looks like I’ll be making this one now. Looks oh, so yummy. ??
@Foodiesmeow
Thanks for this recipe. As I prefer to pop my popcorn on the stove top, I am constantly looking for recipes that offer different flavor profiles. While I would not substitute this snack for dinner, but I would use it for dessert.
As per usual, this recipe worked well for me. However, I would like to offer a word of warning: stand away from the open section of the lid. I didn’t and was popped with some oil.
Again, thanks!

Am completely hooked on Game of Thrones at the moment (literally only just discovered it – must have been previously living under a rock) – so will make this and nibble on it in front of the tv. Heaven.
