Olive Oil Raspberry and Sea Salt Brownies

[E]very good baker has a lot of secrets.  

They have a secret stash of chocolate hidden in the back of the pantry (usually behind the garbanzo beans).  They have an amazing recipe for the very best Peach Pie that they share with exactly zero people.  They have a secret cookie scooper they don’t let anyone else use.  There’s the vintage church cookbook they like to keep all to themselves, the stack of good puff pastry hidden under the ice packs in the freezer, and the secret spell they cast over all of their batters before they go in the oven… because bakers are actual wizards with magical powers and everyone knows it.

The secret to these dark and fudge brownies… because I try to share all of my best secrets… is Bertolli Extra Light Tasting Olive Oil.  It’s perfect for baking!  We get all of the good, cholesterol-free fats from olive oil without the overwhelming olive oil taste that we might not want in our sweet baked goods.  Oh!  Pro-tip: this olive oil is also great for frying.  It has a super high smoke-point and can withstand high temperature for frying up treats.  Win!

Olive Oil Raspberry and Sea Salt Brownies

Substituting olive oil for butter is super easy, especially in chocolate brownies and cakes.  

Here’s an easy conversion chart!

Olive Oil Raspberry and Sea Salt Brownies

Brownies are all about the chocolate and what we can do to compliment the chocolate. 

Chocolate never really needed any accessorizing, but more is more around these parts.  

Espresso powder, an optional but highly recommended addition to these brownies, and a slightly bitter note and lovely depth to the chocolate.

Fresh raspberries add the perfect juicy, Summer sweetness to dark chocolate.  Pecans, because we’re in the South and pecans are a necessity.

Dark chocolate and olive oil are melted and stirred over a double boiler.  The two will marry into a loose and glossy mixture.

Chocolate and olive oil are added to the granulated sugar and stirred.  The mixture will be a bit grainy.  Not to worry, it’ll all come together.

We just need the magic of eggs!  

Eggs will thicken the batter, giving it strength and structure.

Whisked until shiny!

As the eggs are whisked into the chocolate and olive oil batter, the sugar will dissolve and the batter will become perfectly glossy.

Our small bits of flour, espresso powder, baking powder, and salt are added to the chocolate goodness.

The 8×8-inch baking pan is lined in parchment paper, for easy brownie removal, and sprayed lightly with Bertolli Extra Light Tasting Olive Oil Spray.  Just 100% olive oil and so great! We’re double sure our brownies won’t stick!

The batter is spread into the prepared baking pan and generously studded with fresh raspberries, coarsely chopped pecans (because why not!?), and a small sprinkling of coarse sea salt.

Gooey and baked!  I like my brownies just a hint under-done.  There’s nothing like a warm, gooey brownie to bring to life the depth of chocolate, the hint of fruity olive oil notes, and notes of fresh raspberries and intriguing salt!

Ingredients

  • ¼ cup Bertolli Extra Light Tasting Olive Oil
  • 8 ounces bittersweet chocolate, finely chopped
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ¼ cup all-purpose flour
  • 2 teaspoons espresso powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon fine sea salt
  • 1 cup fresh raspberries
  • 1/2 cup coarsely chopped pecans (optional)
  • coarse or flaked sea salt for finishing

Instructions

  1. Place rack in the upper third of the oven and preheat the oven to 350 degrees F.
  2. Line a 8x8inch brownie pan with parchment paper, allowing excess paper to hang over 2 sides of the pan, making the brownies easier to remove. Spray the pan and paper with nonstick cooking spray.
  3. In a medium, heat-proof bowl set over a pot of simmering water, warm the olive oil and bittersweet chocolate together over low heat, stirring until the chocolate is completely melted and smooth.
  4. Remove from the heat and stir in the sugar. Beat the eggs in one at a time. Add the vanilla and beat until sugar is dissolved and mixture is smooth and glossy. Add the flour, espresso powder, baking powder and salt and whisk until the batter again becomes smooth and shiny.
  5. Scrape the batter into the prepared brownie pan and sprinkle with raspberries, pecans (if using), and a small amount of flaked sea salt. Place in the oven and bake for approximately 30 minutes, or until cooked through but still gooey.
  6. Remove from the oven and allow to rest in the pan for 30 minutes before slicing. Enjoy with another sprinkling of sea salt!

    The batter came out very thin. I used an 8X8 inch pan, really a double batch would have fit better in the pan. As a result, the recipe is easy to overbake. I also found the end result too sweet.

    These were sooo good. I just used regular extra virgin olive oil. I couldn’t have told you they didn’t have butter in them if I didn’t know.

    Just made these. Really loved the raspberry and chocolate together in a brownie, especially with the salt. I only had frozen raspberries so I added another 1/4 cup of flour in case it got watery. That turned out well. I only had extra virgin olive oil so I mixed it with avocado oil. That went well. I also decreased sugar to 1/2 cup. Given there isn’t cocoa in these, I knew they would be too sweet with 3/4 cup. Again, this worked too. However,I really believe these needed one more egg. They are pretty oily. Reminded me of when years ago, I forgot ALL the eggs in a brownie recipe…not pretty. Or maybe try cocoa and the original sugar because the melted chocolate already has fat in it. There will definitely be a next attempt though! Thx

    Also, can I use butter in place of the olive oil?

    I’ve made these for a friend a couple weeks ago and it took way more than 30 minutes to cook. Is it possible we are supposed to put the rack in the lower third of the oven instead of the upper third? It came out very good anyways but a bit burnt around the edges. Thank you Joy for all those delicious recipes! :)

    I made these and sadly they turned out mushy and thin. Any suggestions on how to correct that? They tasted good but I wouldn’t want to serve them to anyone. They fell apart in my hand. :(

    The one thing that usually thwarts me when I want to make brownies, is not having any butter in the house. So you’ve fixed that! Raspberries too! Just magic.

    I never alter recipes, but this one just sounded too good- if anyone wants to make gluten free or paleo, I subbed almond flour for the other flour and it made the most delicious brownies! Thanks Joy!

    Can I use defrosted berries or should I make the brownies with fresh berries and freeze them? My son is out of state and I won’t see him for a while. He’s really craving these brownies.

    I made these last night and they are delicious but they turned out kind of thin. Like the batter needed to be 1.5 times the recipe. I’ll probably make again doubling it to see but just wanted to flag for others.

    Instead of a square baking pan, use your cupcake pan and an ice cream scooper – you get more crunchy edges – and individual brownies that are easier to pack – cause you don’t have any crumbs.

⁣⁣
Two Easy No-Yeast Bagels⁣⁣
1/2 cup self-rising flour⁣⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)⁣
1 large egg, beaten for egg wash⁣⁣
1/3 - 1/2 cup grated gouda or gruyere⁣⁣
Everything bagel seasoning⁣⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣⁣
⁣⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣⁣
⁣⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣⁣

Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣⁣
⁣⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣⁣

Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
