Thursday Inspiration

Every now and again we need a little post-mid-week pick me up.  Post-mid-week refers specifically to Thursday…  because Wednesday is mid-week and Friday is a celebration.  We’re looking Thursday smack dead in the eye and willing it to be Friday but you can’t make a leopard out of a lemur (which is totally a saying that I just made up and am definitely not deleting).  

Here’s some inspiration to help us soar through this day, or at least the next fourteen to eighteen minutes. 

•  Sia singing Diamonds with rawness and realness.  Also, her carpool karaoke is spot on.  Lastly, raise your hand if you’re going to be Sia for Halloween.  Too soon?  Because I’m definitely raising my hand. 

•  I made a batch of soup today for a friend who is under the weather.  It wasn’t very bloggable mostly because it was an instinctual chop, saute, and blend soup. Carrot, Sweet Potato, Ginger, Coconut Milk a riff on Minimalist Baker’s Coconut Curry Soup and my Carrot Apple Ginger Soup.  

•  I saw a lady on an airplane with this purse… and I thought ‘oh I’m going to look for that purse and treat myself’… and then I found it, and holy moly it’s expensive, and my pocketbook hid itself under my couch and says it’s never coming out.

•  It’s Deviled Egg Season.  We don’t have a minute to waste. 

•  My Maj Tracy suggested I listen to this episode of The Lively Show: How to Experience More Positive Emotions Everyday.  It’s for everyone!

That’s all for Thursday.  We’re making pancakes this weekend.  Recipe tomorrow!

    Joy — I agree that bag is GORGE. I found one at Old Navy the other day that’s similar and totally does the trick (and looks surprisingly expensy). It’s also 30 bucks, so your wallet can stop hiding :)

    Joy, I love you and all that you do! I think that if you love something, and if you feel great every time you wear it, you should GO FOR IT! It’s a special purchase. They also make it in a smaller, less expensive version that is perfect for when you’re out and about, it’s basically all you need.

    Post-mid-week pick me up, totally needed. Your soup combines some of my favourite things; I wouldn’t mind some. Also, that purse…that price tag…Obscene.

    A mid-week break is definitely needed. And as u said friday is celebration day and thursday needs to be pushed. But not anymore. Nice way of passing thursdays. And waiting for pancake recipe.

⁣⁣
Two Easy No-Yeast Bagels⁣⁣
1/2 cup self-rising flour⁣⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)⁣
1 large egg, beaten for egg wash⁣⁣
1/3 - 1/2 cup grated gouda or gruyere⁣⁣
Everything bagel seasoning⁣⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣⁣
⁣⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣⁣
⁣⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣⁣

Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣⁣
⁣⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣⁣

Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
