Let It Be Sunday!

Hello dear friends!

We’re in the crunch of it, aren’t we?  Have you done all the things you might need to do, like mail those holiday cards? (Mine are on the floor next to my bed, half written, almost done, thank you Minted!) Have you shopped and crafted and shipped and geez… my answer is No.  Not yet.  I’m getting there… but first let me watch this episode of 20/20 about JonBenet Ramsey because priorities.

This weekend I hosted the first workshop in The Bakehouse!  We hade an oven full of Apple Cranberry Pies, laughed so much, and made new friends!  It’s my most favorite thing, welcoming you into the studio for real-life cooking and connection.  We’ve got a lot of making and baking to do in the year to come.  Make sure you follow me on Instagram, that’s where I’m announcing the workshops right now.

I hope you are well and holding on tight in this crazy world.  You have my love.  Here’s some of the Internet:

•  I feel like this is a really important question to ask:  What is happening in Aleppo?  The toll on its human population is astounding.  Here’s What Aleppo Looked Like Before Shelling Began

•  Homeless U: First Shelter For College Students Opens Its Doors.  A strong reminder that when you’re on your own to make a living, educate yourself, and deal with everyday life…life is not easy, not easy at all.

•  Take a moment to look at this NYT piece on Yemen:  We Visited The Place the World Has Forgotten

•  13 Food Trend Forecasts For The Next Year.  I mean… I’m always down for technicolor sprinkles.

•  The Mysterious Allure of La Croix’s ‘Natural Flavor’.  To me it feels more like a light fragrance hidden in carbonated water bubbles.

•  A great podcast I feel lucky to have been a part of:  We Could Make That Podcast

•  A few years ago I made this Easy Yule Log Cake with chocolate wafers, peppermint candy, and whipped cream.  It’s like an Ice Box Cake in a log shape.  Solid holiday vibes.

•  Jon made these Hot Chocolate Cookies with Toasted Marshmallows and they seem exactly right- like Winter S’mores!

•  This bumped every other book on my reading list right now… Hi, Anxiety: Life With A Bad Case of Nerves by food writer Kat Kinsman.

•  I’m taking a break from social media… but lemme just show you this Avocado Toast right quick. OMG, right?

•  My shoe-boo Dansko makes a really sweet + super functional rain boots. See also: Fox socks.

•  Very topical advice:  7 Mistakes to Avoid When Freezing Cookies

•  Two of my favorite things from King Arthur Flour that we used in the pie baking workshop this weekend:  Wooden Treat and Pie Box and Madagascar Cinnamon!

•  What’s for dinner?  This week’s Pan-Seared Salmon with Roasted Vegetables and easy yogurt sauce.

    Hi Joy,

    I’ll be road tripping through New Orleans on New Year’s day. Any recommendations of happenings around town on the 1st or 2nd? Possibly a Bakehouse class? :)

      Not Joy, but a local nonetheless. May I recommend riding the streetcar after dark down St. Charles. The houses do their lights up proper.

    Thanks for the Homeless U story. I support a program to help students who have aged out of foster care at my alma mater. I’ll have to ask if this is an area they are exploring, too. Most of us need a little help getting started in life, some a little more, but what an investment in their future and our country.

    Joy, I traveled to Syria in October 2009 and what I found was the most beautiful country and the most hospitable people. I’m extremely sad at what has transpired over the last few years. I love the Aleppo pictures that were linked. It brings back wonderful memories.

⁣⁣
Two Easy No-Yeast Bagels⁣⁣
1/2 cup self-rising flour⁣⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)⁣
1 large egg, beaten for egg wash⁣⁣
1/3 - 1/2 cup grated gouda or gruyere⁣⁣
Everything bagel seasoning⁣⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣⁣
⁣⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣⁣
⁣⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣⁣

Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣⁣
⁣⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣⁣

Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
