Let It Be Sunday, 295!

Hello friends, good morning! 

How are you? No really… how are you? 

I’ve had one of those weeks where I surrender to the feeling that there simply aren’t enough hours in the day knowing that there are plenty and I’ve just loaded too much on my plate. It’s temporary like everything so, ya know, we good! I feel like I’m working for next week and for next year at the same time, not a complaint, actually cool, just a really bizarre juggle. 

This week my friend Sarah offered me this perspective. She said when you’re juggling a lot of balls it’s helpful to identify which balls are glass – you can’t drop those, and which balls are plastic – you can let those fall to the ground.  This week, a lot of plastic balls fell to the ground.  Our Sunday post is a glass ball.  The Sunday post stays in the air. 

I haven’t read much newsy news this week.  I hope you’ll forgive me.  Our offering below is one of my most random offerings but it’s what simply what I have to offer this week. I’m writing this Thursday night ahead of a long weekend camping trip in the Texas hill country. Time and spaaaace!

Here’s our glass ball Sunday! As always, take only what you need and consider the rest plastic balls:  

•  Let’s take it to space for a rare rubble grab. I know it’s rubble but wow it’s so cool!   (AP)

•  This read is like taking one big, giant step outside ourselves and into a really lovely, sometimes achey, often vulnerable place.  Best of: Parenting Around The World (Cup of Jo) 

•  This week I went to Target and I told myself that I would stay in the main aisle, that I would not venture off into the clothing and accessories and lose myself. I did a great job and only bought this dress that, to be fair, was on the end cap, so I stuck to my promise.  (Target) 

•  One of my google searched this week lead me here, to five freezer marinades. We’re adults trying to keep our lives together and this is just part of it. (The Kitchn) 

•  Ok friends I know this is truly coming out of left field but we need to talk about Lenny Kravitz. Specifically we need to talk about Lenny Kravitz, his memoir, his scarf and his abs. Perfect timing, really. This week I also watched my friend Whitney’s Deep Dive into Lenny and Lisa and it was really so juicy and informative.  We can not stress this enough:  Let love rule. (GQ and Instagram) 

•  Fall cookbooks are rolling out and it’s such an exciting time for my ever-expanding library. I am deeply excited to cook from Ottolenghi’s Flavor and This Will Make It Taste Good from Vivian Howard. I feel like both of these books will make really great holiday gifts so – keep that in mind! (Book Larder) 

•  Let’s just take in this fleeting moment of FBI Agent Fox Mulder? Remember when we all wanted to be FBI agents because of Mulder and Scully or was that just me? (Instagram) 

•  To make: Pumpkin Pecan Scones with Brown Butter Glaze because… October, duh. (Joy the Baker) 

It’s short and fluffy this week. Thanks for your grace about it.

    So many thoughts this week!
    What amazing perspective?! Glass vs plastic balls! so simple, but so true.
    So happy to see Tron in this weeks pic too! He always brings a smile to my face when he’s featured.
    Cup of Jo’s parenting series have to be some of my favorite blog posts. I started reading all them while I was pregnant with my son. I like re-reading them now that he’s two (and I’ve got a little experience :) ) to see how my perspective on the articles has changed.

    I hope camping did what you needed it to! Have a great week!

    Good Morning, Joy!] So happy to see hanfsome Tron looking healthy and curious.
    And…of cousre you had to purchase that dress at Target. At $40, there would be o reason not to.

    I love the glass/plastic balls insight! Weeks like that feel like a giant game of whack-a-mole to me. Sarah’s way frames the chaos as something we actually have some control over. Smart person. I hope you have a peaceful week ahead!

    Good morning,Joy! Thank you for your offering this week. I loved the article about parenting around the world. It brings lightness during this crazy time. It was good for my mind. Just tryna get the most cheese on my most simple s Just tryna get the most cheese on my most simple small-batch bagel recipe. Get in on this with me: ⁣
⁣
2 Easy No Yeast Bagels⁣
1/2 cup self-rising flour⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)
1 large egg, beaten for egg wash⁣
1/3 - 1/2 cup grated gouda or gruyere⁣
Everything bagel seasoning⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣
⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣
⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣
⁣
Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣
⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣
⁣
Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.

⁣⁣
For the rolls: ⁣⁣
• 3/4 cup lukewarm milk⁣⁣⁣
• 1 large egg⁣⁣⁣
• 1 large egg yolk⁣⁣⁣
• 6 tablespoons unsalted butter, softened⁣⁣⁣
• 3 cups all-purpose flour, plus more for dusting⁣⁣⁣
• 2 ¼ teaspoons instant yeast⁣⁣⁣
• 2 tablespoons light brown sugar⁣⁣⁣
• ¾ teaspoon salt⁣⁣⁣
• ½ teaspoon vanilla extract⁣⁣⁣
⁣⁣⁣
For the filling:⁣⁣
• 1/3 cup unsalted butter, softened⁣⁣⁣
• 1 cup brown sugar, packed⁣⁣⁣
• 2 teaspoons ground cinnamon⁣⁣⁣
⁣⁣⁣
For the icing:⁣⁣
• 4 ounces softened cream cheese⁣⁣⁣
• 1 cup confectioners’ sugar or glazing sugar⁣⁣⁣
• 1 tablespoon milk⁣⁣⁣
⁣⁣⁣
1. To make the dough, place all of the dough ingredients in the bowl of a stand mixer fitted with a dough hook. Mix on low until the dough begins to come together. You may want to speed up the process by first mixing all of the ingredients together by hand with a spatula before putting the bowl on the stand mixer. This will help the dough hook work. The dough will come together into a soft, though not too sticky dough ball after several minutes of hand mixing and stand mixer mixing.⁣⁣⁣
2. Place the dough in a lightly greased bowl and lightly dust the top of the dough with flour. Let rise for 60 minutes while you prepare the filling and icing.⁣⁣⁣
3. To make the filling: Combine the butter, brown sugar, and ground cinnamon into a paste. Set aside.⁣⁣⁣
4. To make icing, whisk together cream cheese and sugar. Add the milk and whisk until smooth.  Place in a small bowl and refrigerate. ⁣⁣⁣
5. Roll the dough into a 18 x 12 inch rectangle.⁣⁣⁣
6. Spread the cinnamon filling evenly over the dough.⁣⁣⁣
7. Beginning with one long edge, roll the dough into a log. Cut the log into 8 or 10 equal slices. Place the slices in a greased 9×13-inch baking pan, cover with plastic wrap, and let rise for 30 minutes. ⁣⁣⁣
8. Place a rack in the upper third of the oven and preheat the oven to 375°F.  Bake the rolls for 30 to 35 minutes, until they’re golden brown and bubbling. Remove the rolls from the oven.⁣⁣⁣
9.  Drizzle icing over the warm buns and enjoy! ⁣
