I have this favorite pair of jeans that feel like magic. ย They’re a vintage pair of Levi’s with worn wallet cellphone marks in the back pocket and holes in the knees that I’ve actually earned and not overpaid for. ย  I can dress them up. ย I can wear them with beat up Converse. ย I’ve even slept in these things.

ย I’ve lived in these pants for years and… realtalk: ย I can’t fit into them anymore. ย It feels like a shame. ย It feels unjust… but I know it’s just life (and butter). ย It also feels too hard to let them go. ย So I won’t. ย Maybe I’ll fit into them again. ย Maybe I just need to find the perfect pair of jeans for me to embrace my thirties. ย I’m not stressing it… everything will work itself out in the land of pants.

Why am I talking about jeans?

These waffles feel as classic as my favorite pair of jeans. ย They’re waffles so they’re inherently fancy and homey. ย They can be dressed up with sliced fruit and pure maple syrup… or they can be dressed down with spicy mustard and sliced ham. ย They’re an any-which-way situation. ย I’ve also packed these waffles with a major amount of seeds. ย Accessories are always nice. ย Let’s discuss.

I like this lot of goodness.

These waffles are based in whole wheat flour. ย I haven’t used nearly enough whole wheat in recent months. ย This Whole Wheat and Millet Banana Bread was made far too long ago.

I love the full nuttiness the whole wheat flour adds to the waffles.

I added all sorts of health and crunch to the whole wheat base: ย poppy seeds, roasted and salted sunflower seeds, uncooked millet for, and flax seeds whole and ground.

These waffles are stacked with health and goodness… but you best believe there’s a good dose of butter added too.

Balance friends… balance (and butter).

These waffles are hearty: ย whole grain flavor with some serious support from seeds and millet. ย Standing in the kitchen with an open jar of spicy mustard and a few slices of ham, these waffles are country rustic. ย On vintage china with sliced berries and maple syrup, these waffles are classic health. ย They’re exactly what they need to be… whatever that may be.

Perfect jeans can’t last forever. ย A perfect waffle recipe stands the test of time.

Whole Grain Waffles with Millet, Poppy, Sunflower, and Flax

recipe adapted from King Arthur Flour

makes four small, or two large portions

1 1/2 cups whole wheat flour

2 teaspoons baking powder

1/2 teaspoon salt

2 tablespoons granulated sugar

1 large egg

1 3/4 cups lukewarm milk (I used 2% milk)

5 tablespoons unsalted butter, melted and cooled

1 teaspoon pure vanilla extract

3 tablespoons dry millet

3 tablespoons shelled roasted sunflower seeds (salted or unsalted)

2 tablespoons poppy seeds

2 tablespoons flax seed meal

1 tablespoons whole flax seeds

In a medium bowl, whisk together flour, baking powder, salt, and sugar. ย In a small bowl, whisk together egg, milk, melted butter, and vanilla extract.

Add the wet ingredients, all at once, to the dry ingredients. ย Stir until all of the dry ingredients are moistened. ย The batter may be lumpy. ย That’s ok. ย Add millet, sunflower seeds, poppy seeds, flax seed meal, and whole flax seeds. ย Whisk to combine and try to beat most of the lumps out of the batter. ย Allow batter to rest for 10 minutes while the waffle iron preheats.

Cook waffles according to your waffle makers instructions. ย I like to make these as small waffles since they’re dense and seedy. ย These waffles are great fresh from the waffle maker, but they’re also great individually frozen and reheated in a toaster oven. ย I like to serve the fresh waffles with fruit and maple syrup. ย I like to serve the reheated waffles with peanut butter and jelly or ham and mustard. ย

  1. Delicious, my favourite so far, thank-you! LOVE the millet and poppy seeds cracking between my teeth as I eat them – such a good idea. Had no sunflower seeds so replaced them with crumbled pecans, and I used stevia, but they turned out great. I gotta say though… I think your recipe makes way more than 2 large portions… I’d say 5 as they are quite filling. I was able to make 14 fat mini waffles.

  2. Waffles are a delicious (sometimes too delicious) breakfast food, so it’s great that you used a whole grain recipe with sunflower seeds to make them a healthier but still mouthwatering. Plus, it never hurts to add some fruit!

I have a question, can I substitute whole wheat pastry flour for the whole wheat flour, and halve the recipe? Thanks.

    I never really understood why would women in their thirties want to squeez in to their high school jeans. it’s just like I would look at mt mini-mouse t-shirt that I had when I was 5, and say “well, maybe someday it will fit in again”.
    people change, and the clothes that they are suposed to where change with them…it’s just the way life is.

  12. YES. These waffles are right up my alley, Joy. Two weeks ago, during a snow storm, I bent over and ripped the shoulder on my chambray shirt and later ripped the crotch area of my corduroys. I’m literally bursting out of my clothes! Spring could not come soon enough.

  16. My favorite jeans recently got a huge tear down the back. I tried sewing, patching, and sewing a patch to no avail. Even though I finally found a decent pair of replacement jeans the ripped ones are still hanging out in the back of my closet because I can’t bear to part with them.

  18. I ‘outgrew’ my favorite jeans about 7 years ago, and I still have them in hopes that they may fit again. The company also stopped making that style so I occasionally have thoughts of being super crafty and using the old jeans as a pattern for a new pair, since they also have paint on them =)

  19. What a nice twist on regular waffles! It makes me wanna have breakfast again! Breakfast food all day long! I used to make all kinds of waffles, adding pesto or sun dried tomato to the batter to make mini savory waffles as appetizers. It makes me wanna experiment again!

  22. My kids are SOOO picky about their foods, and once they have a favorite, they don’t want me to mess with it. I’ll stash this recipe away for once they’ve moved out of the house and have guests over for the weekend… :o)

    But I had to make mention of your favorite jeans. Not sure if you’ve got a sewing machine and a bit of chutzpah, but you could repurpose your jeans into maybe a jean skirt, or make a nice purse, wallet, something else useful out of them. Makes me think of the story Joseph Had a Little Overcoat…

    I feel you on having a pair of favorite jeans that are so hard to let go after they’ve become such a huge part of you. They are just so comfortable, versatile, and hard to throw out. I have a favorite pair of old jeans that I’ve had since God knows when. I’ve worn them to the movies, to the mall, while lounging around the house, wore them through a few boyfriends lol. I don’t usually wear clothes for a long time, but these jeans are the one item I’ve kept in my closet for years.

  25. Great looking and sounding waffles. I bet the millet and whole wheat add such a heartiness and chewiness and just great flavor and texture. And great looking berries on top. And while I’m on your site, an Anthro ad is what I am seeing. I see that as a sign for you to go there and have fun pants shopping :) Or anything shopping!
