I watch the movie Jerry Maguire once a month. ย I dunno…
I seem to make soup every two weeks.
I chase my cat around the neighborhood about once a week.
I think about buying fancy shoes I don’t need at least two times a week.
Every few days I ride my bike… and eat salsa and tortillas… not simultaneously.
Every day, I send an obscene amount of text messages and emails. ย Millions. ย Too many. ย Lots.
Today I made soup, watched Jerryย Maguire, sent about 8.4 million text messages, and thought about buying unnecessary shoes. ย What am I going to do for the rest of the month?
I don’t know, but it better involve Nutella and pretzels… and maybe string cheese.
I found these pretty pretty small potatoes at the grocery. ย Tossing them with rosemary, olive oil, salt, and pepper.
Roasted potatoes stacked in the center of a velvety soup. ย Good idea.
This soup is just about equal parts garlic and onions. ย The onions are cooked to translucency. ย Some of the garlic is roasted, some is left raw. ย Roasted garlic becomes sweet and creamy. ย Raw garlic has that delightful garlic kick. ย This soup is creamy, velvety, and does not have a super overpowering garlic flavor. ย I think it’s balanced and super comforting. ย If you’re afraid of garlic… you might just be surprised by this soup.
Lemon and freshly grated Parmesan Cheese only compliment the soup. ย Brightness and salty cheese.
It’s pretty and comforting, easy and classy. ย Yes, classy. ย This soup feels like a comforting way to transition from winter to spring.
Ps… sorry about the bad breath. ย I really am.
Roasted Garlic Soup with Rosemary Roasted Potatoes
Makes 2 large, or 4 small servings
adapted from Bon Appetit, February 1999
For the Roasted Garlic:
26 garlic cloves (unpeeled)
2 tablespoons olive oil
salt and pepper
For the Potatoes:
2 Russet potatoes, cut into large bite-size chunks
or
12 small new or purple potatoes, or a mixture!
2 tablespoons olive oil
1 tablespoon fresh rosemary, chopped
salt and pepper
For the Soup:
2 tablespoons olive oil
2 medium yellow onions, sliced into half rings
2 teaspoons fresh thyme, chopped
15 to 18 garlic cloves, peeled but kept mostly whole
4 cups chicken stock (vegetable stock will also work)
1/2 cup Greek yogurt, milk, or half and half, or heavy cream
salt and pepper to taste
lemon wedges, Parmesan cheese, and good olive oil for drizzling
Place a rack in the center and upper third of the oven and preheat to 350 degrees F. ย Place 26 unpeeled garlic cloves in a small baking dish. ย Toss with olive oil, a few pinches of salt and black pepper. ย Cover dish with foil and set aside.
Dice potatoes into large bite-sized pieces and place on a baking sheet lined with parchment paper. ย Toss with olive oil, rosemary, salt and pepper.
Place the foil-covered garlic cloves ย and the rosemary potatoes in the oven. ย Bake both for 45 minutes. ย Remove the potatoes from the oven once or twice to toss around the pan to ensure even baking. ย After 40 to 45 minutes, a knife will easily pass through the roasted garlic and roasted potatoes. ย Remove both from the oven and allow to cool.
When cool enough to handle, remove the roasted garlic from their skins and combine with the raw garlic. ย Set aside.
Heat a olive oil in a large pot over medium heat. ย Add the sliced onions and chopped thyme. ย Cook until onions are translucent and thyme is super fragrant, about 6 minutes. ย Add the two types of garlic and cook for 3 to 5 minutes. ย Add the chicken stock, reduce heat to low, cover and simmer the soup until raw garlic is soft and tender, about 20 minutes.
Remove soup from heat and blend, in two or three batches, in a blender until smooth. ย Return soup to the pot and add yogurt or cream. ย Stir until yogurt has dissolved; a whisk helps incorporate the thick yogurt into the soup. ย Add salt and pepper to taste.
To serve, stack roasted potatoes in the center of a shallow bowl. ย Pour soup around the potatoes. ย Drizzle with olive oil, a dash of fresh lemon juice and a generous shaving of Parmesan cheese.
Soup can be made one day in advance, and develops really well in the fridge. ย Soup lasts, in an airtight container, in the refrigerator, for up to 4 days.

This soup is my new favorite thing in the whole freaking world!! Seriously, it’s been so cold out here, and I needed something to warm my bones and make my mouth and wallet happy at the same time. This soup is a winner. It’s easy, it makes the house smell incredible, the taste is out of control good (seriously, do not skimp on the lemon twist), and it’s very inexpensive to make. A+

Could you use an immersion blender instead of a regular blender? As much as I love my blender, it’s dated. But I do have a new fancy immersion blender handed down by an aunt and uncle who never used it!
i think an immersion blender would totally work! i just think my blender is faster… that’s why i do it that way. go for it! enjoy!

You are a rockstar Joy. Seriously amazing stuff here. Doubled it cause I knew I’d love it & boy I do! I made rosemary bread to go along with it & my boyfriend requested I roast an extra couple *heads* yes… not cloves… to smear on the bread to dip into the soup. We love our garlic.
He ate the entire loaf of bread, 3 bowls of soup & 2 entirely separate heads of garlic. He had a tummy ache. I said I told you so. He said it was worth it.

My house smells lovely ;) and the soup was so perfect. Except for one teensy thing – I couldn’t get the yogurt to fully incorporate. Any suggestions? I ended up with little white dots after some heavy whisking. But it didn’t make it any less delicious!

So I made this soup last night, and it was so so so so good! The only thing is that it took me forever! Granted, I was distracted by watching episodes of Glee so that may have added to the length of time it took. I also made a double recipe because I knew it was going to be really good, and I would be sad if it only lasted a day. Any suggestions on how to make to cooking and prep time shorter? I would probably make this soup all the time if it weren’t for that.

I saw these potatoes today at Trader Joe’s and I got so excited! Obviously, I bought some and am making this soup tomorrow night for dinner!
How would you suggest making the soup vegan? Silken tofu? soy milk? I love butter, but my sweetie is def. vegan. We have 8 heads of garlic in the fridge right now, so this would be perfect for tonight!

This soup is on the stove (delicious). Yams, potatoes, onions and carrots are ready to roast. Chicken is in the oven. Dinner will be ready soon. Yum.

So I made this exact recipe about a year ago and it was TO DIE FOR!!! DELISH and would work great as a first course. That said, I would highly recommend it being a first course. My husband and I ate the entire soup for dinner and boy, we did not sleep at all that night. Let’s just say we were kept up by musical noises. Just keeping it real folks!

There is a traditional Basque Garlic soup that my family use to make; I hated it as a kid. Since, I have remade the recipe, and love it. It is perfect when you are sick.

I have a sign in my kitchen that I hand painted and it reads “Hope you like Garlic…” Random? YES, but applicable as we are a GARLIC family! we eat it in nearly everything at most meals, on the out side of grilled cheese, in soups, all pasta/noodle dishes. I even rubbed a clove on my toast this morning right before I slathered it with avocado. As I love soup only second to garlic, I can not WAIT to make this, already planning a trip to the farmers market to buy several cloves of garlic and the lovely bunch of different colored baby potatoes! thanks hun!

I love your soup recipes! I’ve made your cream of mushroom soup twice. Once with half and half (even though I already had the tofu, but I just felt like creamy soup) and then again with the tofu. Both ways were delicious! Can’t wait to try this one!
Gosh, this looks delicious! I want to have some now and it isn’t even lunch time yet! I have shallots at home, so maybe I will make this for later in the week with some caramelized shallots along with the onions. Or maybe I will make it as soon as I get home, though I need more potatoes. I always need more potatoes.

I would love to make this! Except, everytime I roast garlic, I end up eating it right out of the skin instead of cooking with it. It’s a very attractive quality, I realize. Sucking garlic cloves out of skins hot from the oven + garlic breath = I’m a catch for sure!

Soup looks classic. Roasted potatoes – comforting. Great change from chunky soup, although most of your soup recipes seem to be creamy. I will add this to the to – make list. Right after I get sick of sweet potato fries…. which is likely NEVER.

The soup and potatoes look absolutely delicious and the potatoes are beautiful, but what I really wanted to say was I finished my Nutella yesterday by scooping out spoonfuls and eating it with pretzels. Pretzels + Nutella = YUM. I’m trying to think of something I can bake using those flavors.
