Brown Butter Toasted Coconut Chocolate Chip Cookies

Wait. ย What? ย Clearly I have a problem. ย I can not stop listening to this silly song.

… and now I want people catching grenades. ย Please.

Actually, no. ย All I really need is someone to make cookies for. ย … and maybe someone to push a piano around Los Angeles for me. ย That would be… odd.

Just listen to the song… most of the words I’ve written will make more sense.

I’ve wanted to make chocolate chip cookies for weeks. ย For one reason or another I’ve been dilly-dallying with quinoa and scones and vegan cookies.

None of these things really removed my brain from chocolate chip cookies.

Yesterday morning I woke up and browned butter.

See? ย It’s literally brown. ย It smells just as delicious as you might imagine. ย The kind of delicious that you want to rub all of your body. ย That kind. ย The good kind.

Once the butter was browned, I knew there were chocolate chip cookies in my future.

I just had no idea how dang good they would turn out. ย I mean… seriously. ย I kinda impressed myself.

With browned butter and and AAANNNDDD toasted coconut, these cookies have depth.

If I had to use words to describe them (and I do have to), I would say these cookies are: ย nutty, toasty, chewy on the inside, crunchy on the outside, studded with dark chocolate, a total high five, and a pat on the back.

And they don’t bake up super flat. ย They have junk in the trunk… thick thighs… you know what I mean.

Make these. ย Catch grenades.

Brown Butter Toasted Coconut Chocolate Chip Cookies

makes just over 2 dozen cookies

recipe adapted from thisย smittenkitchen recipe

1 cup (2 sticks) unsalted butter, melted and browned to about 3/4 cup butter

1 cup granulated sugar

3/4 cup brown sugar

1 tablespoon pure vanilla extract

2 1/2 cups all-purpose flour

3/4 teaspoon baking soda

1/2 to 3/4 teaspoon salt (depending on how salty you like things)

1 large egg

1 large egg yolk

1/4 cup toasted coconut (I used unsweetened, but sweetened will work as well)

1 cup dark chocolate chunks

Place a rack in the center and upper third of the oven and preheat to 350 degrees F. ย Line two baking sheets with parchment paper. ย On one baking sheet, spread out shredded coconut. ย Toast coconut for about 6 minutes, until browned and fragrant. ย Remove from the oven, place in a small bowl and let cool.

Melt butter in a medium saucepan over medium heat. ย The butter will begin to foam and crackle. ย That’s a great sign. ย That means that the water is evaporating from the butter. ย Once the crackling subsides, keep an eye on the butter. ย The butter solids will begin to brown. ย You’ll smell the butter as it browns. ย Once well browned, immediately remove the butter from the flame and place in a small bowl. ย Removing the butter from the pan will ensure that it doesn’t continue to cook and burn in the hot pan. ย Allow the butter to cool for a few moments.

In a medium bowl, whisk together flour, baking soda and salt. ย Set aside.

In the bowl of an electric stand mixer, fitted with a paddle attachment, measure granulated and brown sugar. ย Add the brown butter and beat together, on medium speed, for about 2 minutes. ย The sugar may still look grainy. ย That’s ok.

Add the egg and egg yolk and beat on medium speed for 2 minutes. ย The mixture should become silky smooth. ย Add ย vanilla extract and beat.

With mixer on low speed, add the dry ingredients. ย Beat until just incorporated. ย Remove the bowl from the mixer and use a spatula to fold in the toasted coconut and chocolate chips. ย Dough will be thick.

Cookies can be baked immediately, or the dough can be left in the refrigerator to chill for 30 minutes.

Spoon balls by the tablespoonful onto the prepared baking sheets. ย Bake for 10 to 12 minutes, until golden brown but still slightly soft in the center. ย Remove from the oven. ย Allow the cookies to cool on the pan for 5 minutes, before removing to a wire rack to cool completely.

Store cookies in an airtight container until you can’t help but eat them all. ย Delicious.

  1. omg jtb – I made these as a treat on a finals studying break and they did not disappoint. This recipe got more decadent at every step. Not just 2 sticks of butter but browned. An extra yolk for good measure. A TBSP! of vanilla. Lovely coconut. I love how you really go for it. Delicious.

  4. I loved these! They looked perfect and the texture of the coconut was fantastic. They were ready to come out right at 10minutes, though they weren’t as golden as I had anticipated (when I left them in for longer to golden up a bit, they turned too dry). And unlike one of the bakers above, I actually preferred the way the second batch turned out after having been refrigerated over night. Here are the changes I made:
    1/3 c coconut instead of 1/4 c
    3/4 c sugar instead of 1 c
    Used a combo of bittersweet and semi-sweet choc b/c I didn’t have enough of either

    I did find the batter and cookies a touch crumblier than I’d prefer and I was hoping for more coconut flavor, so in the future I’m going to make these tweaks:
    2 eggs
    3/4 c sugar
    1 1/2 tsp vanilla
    1 1/2 tsp coconut extract
    1/3 c coconut

  5. Hi, I’ve green reading your blog for ages now, and i’ve made some recipes with great success!
    I made these cookies for a New Years Party for the first time, doubled the recipe and made really big cookies. People went crazy over them, I had at least 50 and they were all gone in 15 minutes, tops! :)
    Made them again last night, normal sized, and again they don’t disappoint :). I did decrease the chocolate chips to 2/3 cup, because last time I realized I prefer more dough than chocolate chips. This is my go to favorite recipe! Thank you :)

  6. These are wonderful cookies i have been making some very simmilar to this recipe for some time now. I use more brown sugar then white and add almond extract to the mix. The browned butter makes a big diffrence in the flavor of the cookie.

  8. Hi there, I made these today and they were yum. However the cookies did not come out flat like yours any idea why that happened. Also next time I might add more coconut or leave it out altogether as it does not come through. The cookie dough tasted like caramel because of the brown butter.

I just found your blog today and I think I scrolled through about 6 months worth of recipes ^_^; this was the one I chose to make tonight because the cinnamon-sugar pull-apart bread was going to take too long for my impatient self! I ended up having to make my own brown sugar, also using your recipe, and the cookies turned out AMAZING. They taste like the most buttery, delicious toffee in cookie form. I loooove youuuuuu xD

  12. Made these this weekend and they are outta this world. I only had semi-sweet chocolate morsels on hand. They worked just fine, but made the cookie a little sweeter than I’d typically like.

    So stick with the dark chocolate–so worth it.

  13. OK these were in fact delicious and by far the prettiest cookie I’ve ever baked. I am wondering though if I ruined the rest of the dough. I only baked half of it yesterday and refrigerated the rest… did I ruin it? The cookies don’t seem to be baking as pretty. :(

    1. Cookie dough is definitely not the same when you refrigerate it and use it the next day. Even when you leave it for an hour to go to the store to get chocolate chips…yea, been there done that.

  15. I held off on reviewing these until today because I’m not sure how I feel about them. I think my biggest problem is that I think that they are too sweet- the cookies have an almost grainy-ness from the sugar. I think that the brown butter does come through and so does the vanilla, but the overwhelming sweetness bulldozes everything. I would have also liked to taste the coconut more. Not that they are bad or anything, I’m just picky about cookies.

    This makes 17 recipes that I’ve tried of yours. My favorites so far are the Red Velvet Black and White Cookies, Cinnamon Pull Apart Bread, and Spinach and Potato Breakfast Hash. I loved loved those three recipes to pieces. But I’ve liked pretty much everything and I think some of the others just require tweaking to fit my personal taste and multiple tries.

  19. My dough was crumbly too. We made a few using the crumbly dough and then added water to the dough to make them a bit more moist. Both ways were DELICIOUS! But the ones with the added water were more chewy. I don’t eat eggs so we used Ener-G Egg Replacer. That could have been why my dough was a bit on the dry side. Thanks for another winner Joy!

  29. Saw these in my feed reader, clicked to the post, printed the recipe and tasted one of the finished cookies (and had to force myself not to eat more) all within about 1 1/2 hours. SO GOOD.

    I made mine a little bit smaller (25grams each before baking – yes, I am somewhat a freak… I wanted them all the same size and didn’t have a cookie scoop) and ended up with 49 cookies from this recipe. This number is awesome for several reasons: they are just right for a snack so I don’t feel guilty, with 4 dozen I can give half away and still have more than enough to eat, the 1 extra didn’t count so I ate it and there were no calories.

  30. A year ago I made my sister brown butter cupcakes, to explain exactly how good brown butter is I told her it smelt so good I almost drank it. The next day she got a terrible tummy bug and said that every time she started to feel better she would imagine me drinking butter and get sick again. I haven’t been allowed to brown a single drop of butter since. I think it’s time for me to rebel, these just look too awesome…

    This is very similar to the awesome “Perfect Chocolate Chip Cookies” recipe from Cooks Illustrated, my own fallback. Can’t wait to try ’em! For those who had crumbly dough: try forgoing the mixer if yours is cheap like mine. I use a whisk for the wet parts, which makes the dough shiny like a mixer, then I switch to wooden spoon for the rest.

  34. I have made many a cookie in my days but this is the best one so far! The brown butter and coconut combo is amazing. I cut the sugar down to a scant 3/4 C of each and used 1C of whole wheat flour (with 1 1/2 unbleached) and it worked well and seemed plenty sweet. Mmmmm….so good.

I have made many thousands of batches of cookies in my life, but I have to give these the “BEST COOKIE EVER” title. I also added toasted finely chopped pecans. I thought I was going to die eating them. Next time, I plan to try toasted chopped macadamia nuts – you know, to go with the coconut.

  40. I am intrigued by this recipe. Especially the browned butter part. Do you think it will work it I try and brown dairy-free margarine? I’m not sure if it will taste the same never having had browned butter. What does the browning add to the flavour?

    1. Browning butter adds… depth? I think it’s sort of like the difference between un-toasted and toasted spices or nuts : overall, similar flavor profiles, but a little more savory-ness and oomph. Did you try browning the dairy-free stuff?

      1. I did try browning the dairy-free marg and it reduced the same as butter, but didn’t smell the same unfortunately. The cookies I made with them also didn’t taste quite right. Probably because I tried making them dairy and gluten-free in one go. I tried making a gluten-free flour version and a grain-free almond meal version. The almond meal cookies were okay but I think I’ll have to keep experimenting. Perhaps I need to just do a normal wheat and dairy version to see what I’m aiming for.

      1. So far, playing with flours. When I make GF goods I sub out flours and add xantham gum, about 1 tsp per 3/4 cup. Try it! Maybe you’ll beat me to it!

  43. Mine came out crumbly, too. I scooped them and pressed them. They baked just fine and are DELICIOUS! That word needs all-caps.

    I’d also like to know what I did wrong.

    I think I may just have to bake more batches. For science.

    1. My dough was a little crumbly too, I have had that problem in the past with the sugar I use, it is less refined and in bigger crystals than regular white sugar and I think it doesn’t dissolve as well and so leads to crumbly dough.

      The cookies were still totally amazing though, I didn’t think that small an amount of coconut would be noticeable but it was the perfect tropical hint. Thanks Joy :)

      1. incredibly dry dough, didn’t bake up very thick as advertised/uniform/pretty, baked thinner when a little milk was added to compensate for the crumbly dough, poor texture (too crispy), good flavor, easy recipe.

        1. made a second time with better results. performs better without coconut. cook 10 min and cool completely on sheet. cookies bake up as shown if baked on cool sheets. cover dough bowl with wet paper towel to prevent desiccation. veganize with Earth Balance and EnerG egg replacer, plus no more than 2 T soy milk if needed to shape.

      2. Oh that is exactly what the problem was! I just bought this organic sugar from Costco and it does have bigger crystals. I’m going to have to go get some regular sugar and try this again. Thank so much!

        1. Wait! My dough was crumbly too. But I think my problem was that I waited too long after browning the butter to get to the creaming-with-sugar part…it wasn’t warm anymore so the butter-sugar-egg mixture didn’t get super silky as it should have. The flavor was delicious though, so I’m with Rosa. Better try making them again…for science’s sake.

  49. I went home and immediately made these. Then, after my husband and I ate an embarrassing number of them, I decided to bring the rest to work. There is now ONE cookie left. My coworkers have all sung praises of my cookie-baking prowess, and I’m pretty sure I could auction off the remaining cookie for, say, unused vacation days or something. Can I just add them in or should I strain them out of the brown butter? I strained them for that but frankly, I’d rather save myself the step a dirty sieve.   56. That is so funny! That smittenkitchen recipe is my go-to chocolate chip cookies recipe, and has been for a while now. I LOVE them. When I read that you browned the butter for your cookies, I thought, “My smittenkitchen cookies have melted butter…next time I should try browning it first!” Looks like you had already had the same idea. :) These cookies are also excellent with some peanut butter chips in place of some of the chocolate chips.

    1. It’s only long because she took the time to explain how to brown butter. Try copy and pasting into a Word document and removing the extra line breaks or the instructions on browning butter. Or just change the printing scale to smoosh it onto one page. No biggie.

      1. No biggie? it was frustrating and was taking me forever to try it in Word (I always try that). In the end I had to copy it line by line. The title of the recipe was too big, w/o that it would have been one page exact.

    And yet, my might-as-well-be-step-sister-in-law (say that three times fast) who is still in COLLEGE, says that my interpretive dance to this song is better than any she has seen on campus…and has inspired her to put this song onto any party mix cd (or perhaps they use ipod playlists these days?) at least three times.

    1. i know! don’t worry- i have NEVER browned butter before either- the idea of it scares me. not just the possibility of messing up, but the possibility of it being so good and yummy that i’ll end up eating it in everything and fighting with my cat over it. yeah. now that’s dangerous.

  88. Hi Joy! These look so yummy, I really want to make them! Unfortunately I am stand mixerless, is it better to do the mixing by hand or use a hand mixer? I’m afraid I would pulverize it with a hand mixer. Guidance would be much appreciated :)

    1. you can totally just use a hand mixer or a bowl and wooden spoon. just cream the butter and sugar until well blended. the sugar will still look a little grainy, but it will smooth out once you add the eggs! happy baking!

  97. Anything is always better with browned butter! That should be a new catchphrase. My first experience with it was making a brown butter hazelnut cake and I look forward to do making more brown butter recipes now with this one.

    This recipe is almost like a thriller – starts off with a bang with browned butter, rises to its climax with toasted coconut, and ends in a whirlwind of chocolate.

    These cookies look perfect – in every way. Perfectly round, crackled, slightly risen…Quick question though, did you chill the dough or bake right away? You said we could do both, but I imagine the texture is quite different when the dough is chilled.

  116. Ooo, I did this (minus the coconut) with Alton Brown’s chewy recipe since brown butter is the best. I ended up freezing most of the dough balls, but then my friend and I finished them off as is. oops…but not. These look fantastic, and I’m intrigued by the coconut!

    I’ve been lurking on your blog for quite some time but I decided to come out of my silence. I too have been itching to make chocolate chip cookies and just haven’t gotten around to it yet, :-( but these look awesome and I have to make them. I seem to be out of butter (ACK!) but that is something I’m going to remedy, here at 2:30 in the morning! Nothing like a trip to the store and then baking in the middle of the night! :-)
