Old Fashioned Doughnuts with Chocolate Glaze

I need to make some decisions. ย I know… welcome to everyday living.

Who do you turn to when it’s time to make big decisions?

Mama and Dad? ย Bestest girlfriends? ย Awesome boyfriends? ย Husband? ย Wifey? ย God? ย Bottle of beer? ย Giant stack of doughnuts?

When it comes to making decisions, I make lists… and stare at them. ย I take hot showers and try to figure out my life. ย I chip my manicure off. I stop blinking.

I ask friends for advice… and wait for them to give me the answer I want. ย Are you guilty of this too!? ย Be real. ย Bad habit.

I ask God… I listen and then I try to figure out how I’m going to hear his answer.

I think. ย I make more lists. ย I stare.

I’ve found that tremendous amounts of fried food also help the decision making process. ย Well… they help pass the time during the quiet list making/staring phase of the decision making process.

Do people actually make decisions while running around like maniacs? ย Is that something that works? ย Is there a lot of yelling involved? ย That sounds like chaos. ย I prefer the sitting, staring, fried food eat, and listening method… but really, that’s just my own personal crazybrain.

Oh wait! ย Are you one of those people that makes important decisions while working out?! ย Ugh. ย Why can’t I be you!?

I probably shouldn’t tell you how easy it is to make doughnuts at home.

These are cake doughnuts. ย They’re more dense than yeasty doughnuts. ย The outside has just a bit of crunch.

It all starts with just a bit of flour and sugar.

Doesn’t just about everything here start with flour and sugar and end in a ball?

When you fry this… it definitely turns into doughnuts.

There are a few things that might keep you from making these doughnuts.

Do you have the fry/candy thermometer? ย Do you have lots of different circle biscuit cutters?

If not… you’re totally saving yourself some calories.

But if you do have these things handy in your kitchen, imagine the calories you can get yourself into!

These cake doughnuts don’t need that pesky yeast rise time. ย They’re crisp, but soft and dense. ย They’re doughnuts with chocolate glaze… so clearly they’re delicious. ย How much convincing do you really need?

Should I teach my kitten to speak so he can tell you how much he enjoyed stealing one off the counter and leaving half a kitten eaten doughnut on the floor for me to step in with my bare feet? ย Would that finally convince you that doughnuts are delicious!? ย Geez.

Old Fashioned Doughnuts with Chocolate Glaze

makes between 6 and 10 doughnuts (I got 8 out of this batch)

adapted slightly from Doughnuts

Print this Recipe!

1 1/4 cup all-purpose flour

1 teaspoon baking soda

1/4 teaspoon fresh grated nutmeg

pinch of salt

1/3 cup granulated sugar

1/4 cup plain yogurt or sour cream

1 large egg

1 tablespoon unsalted butter, melted

vegetable oil for frying

In a medium bowl, sift together flour, baking soda, nutmeg, salt, and sugar.

In a separate small bowl, whisk together yogurt (or sour cream), egg, and melted butter. ย Add the wet ingredients to the dry ingredients and fold together until well incorporated. ย The dough will take some smooshing to gather into a dish. ย It will be like a slightly more moist biscuit dough. ย Wrap bowl in plastic wrap and place in the fridge to rest for 15 minutes.

Place a candy/fry thermometer in a medium saucepan. ย Pour oil into the pan until it is about 2-inches deep. ย Heat oil over medium-low heat.

On a lightly floured work surface, roll bough to a 1/2-inch thickness. ย Cut doughnuts with a 2 1/2-inch round cutter, and cut a hole with a smaller circle cutter.

When oil reaches 360 degrees F, fry 2 or 3 doughnuts at a time for about 1 minute on each side. ย Doughnuts will be golden brown. ย Carefully pull out, drain, and let rest on towel paper.

Chocolate Glaze

1 1/2 cups powdered sugar

4 tablespoons unsweetened cocoa powder

3 tablespoons milk or water

2 teaspoons pure vanilla extract.

In a medium bowl, whisk together powdered sugar and cocoa powder. ย Slowly stir in milk and vanilla extract. ย Whisk until silky and smooth. ย If you need a touch more milk to make this a dippable glaze, add a bit more.

Dip doughnuts in chocolate glaze and let rest to harden slightly.

Doughnuts are best served the day they’re made. ย They also freeze just fine!

  1. i LOVED THE CHOCOLATE CAKE DONUTS FROM THE 50’S AND EARLY 60’S I KNOW WILL THESE TASTE LIKE THEM. I CAN’T FIND ANYONE THAT MAKES THEM TODAY.

  3. The glaze is delish! I needed a vegan chocolate frosting/glaze and found this recipe via google. Glad I found it! It’s exactly what I needed for this cake. I added a touch more water to make it the right consistency… KAF cocoa powder for this was excellent. Thanks for the recipe! I just might be back to try the doughnuts… :)

  6. OHHHHH Mylanta! Made these today, for a specific someone in my family asking for a chocolate covered donut, obvioulsy did not take much convincing, seeing as how he asked last night=). I used to manage a donut shop, and these are literlly the best ones I have EVER had in my life, so THANK YOU! all I had was a heart shape with a little heart, and a pitty that one turned out looking like a blob, he had to be eaten RIGHT away=).     This chocolate glaze reminds me of my failed fondant patisserie I tried to make for my gluten free chocolate รฉclairs. I think I must get a candy thermometer before I attempt anything like that again. But these donuts, maybe I’ll just throw a little dough in, and if it sizzles I’ll risk it. That could work, right?

  19. Hmm…those look soooooooo good. About decisions, I think they’re just all around hard to make. The bigger impact it has on your life and happiness, the harder it is to figure out what to do. But at some point, you just have to make a decision and go with it. If you don’t, you’ll end up stuck in the same place five years from now while life just speeds by. Good luck with your decision making process. Lists are often helpful.

  20. I always talk to friends. One friend in particular. When I was seeing a therapist I talked about decisions that needed to be made with her. She never told me what to do, but she helped me figure things out. And yes, I do make decisions when working out. Running is great for that. But if you don’t want to get sweaty, walking works, too.

  22. Wow, these look awesome! I haven’t had a donut since I was pregnant, which was a year ago, because I still need to lose weight. Cake donuts are my favorite though, and what’s up with Dunkin Donuts getting rid of the simple yet delicious powdered sugar and cinnamon ones?     Lovely looking doughnuts! I like to make yeast doughnuts and then bake them – they come out all soft and pillowy like cinnamon rolls. Heaven. I haven’t had a good homemade cake doughnut in years, though, I may have to dust off my old recipe.

  28. Donuts are usually the one treat I don’t have much trouble passing up. Most of the time I feel like if I eat one, I’ll just feel gross afterwords and it’s not worth it. I saw these on your blog yesterday though and I just HAD to make them. I had my bf over for Donut Tuesday. Totally appropriate for a weeknight endeavor, why not! I did only have white wheat flour though, so they were significantly heartier, but still worked. Very filling. Also, instead of chocolate glaze, we decided we needed to make a honey bourbon glaze. Yu-um!

  29. Mmmmm…I grew up in Winston-Salem, NC, the home of cigarettes, Texas Pete hot sauce, Hanes underwear, and KRISPY KREME DOUGHNUTS. When I was little, it was a really big deal for my family to go out and get a dozen hot doughnuts. Good memories.

I made a list to rationalize buying new sheets last night, that should tell you something. A lot of things I can live without, and I make do sweetening with honey and the such when I just have to have something sweet. The one thing I keep craving though is doughnuts.   40. Joy, I have to ask: do you ever make anything that doesn’t turn out beautiful and delicious? I mean, obviously everything you post about falls in that category, but do you every-once-in-a-while end up with a flop? Something too this or too that? Something that sticks or falls apart or burns?

    I’ve had a few of those lately. I keep trying. And even giving away my attempts with a dozen warnings and qualifiers that “it’s not that great, I know. It’s just edible. I don’t want to waste it, so if you can’t bear it I won’t be offended if you compost it or return it!”

  41. I’ve just tried this recipe and it didn’t turned out well. Which is weird because I’ve tried some of your recipes before and I’ve never experienced any difficulties. The problem was in the dough, it was too moist…I added more flour and I could eventually fry them but they definitely don’t look like yours!

  42. I confess to being somewhat disappointed…I was hoping this was a recipe for the doughnuts that are called “old fashioned” or sometimes “buttermilk” doughnuts; you know, the ones with the two tier effect and the crusty outside? Mmmm. I’m going to have to go find a recipe now…

  43. On making decisions:

    I’m a list maker too. I work out every aspect and pro/con that shit. Then I do something that relaxes me. Unfortunately it’s running. So I’ll go run a million miles until my brain stops racing. Then I go back to the pro/con list in order to make sure that they still make sense with exhausted brain. Then I call the best friend and literally read it out loud to her.

    It’s a process, I know. But it worked for undergrad/grad school apps as well as turning down a marriage proposal (which was actually a great decision and one I probably wouldn’t have made without exhausting everything).

  44. Doughnuts are my cooking failure. I took 3 cooking classes in college specializing in baking, and still can’t make a doughnut, which is really a shame because I love them. I am going through big decisions now too, so I think I need to give doughnut making another try.

  47. I just wanted to say… you don’t have to have lots of different biscuit cutters. You have to have a regular-sized glass and a shot glass. (Trust me to be at my most creative and resourceful when there is fried, chocolate-covered dough involved.)

    Also, if you fry foods at a certain temperature and for a certain time, they absorb less oil while they still look, taste,and feel the same. I forgot the details but its somewhere in one of my magazines…

    2 cups whole milk
    1/3 cup Kentucky bourbon
    5 whole eggs
    1/2 cup sugar
    2 tsp. ground cinnamon
    12 slices egg bread, like brioche

    Mix the milk, eggs, sugar, bourbon and cinnamon together in a bowl. Melt a pat of butter on a hot griddle. Dip the bread in the batter. Place the battered bread on the griddle and cook until the first side begins to turn golden brown. Flip the French toast and continue to cook until the other side is golden brown, too. Serve with butter, berries and syrup.

As I read through this (as usual, hilarious and well written) post, I found myself praying: “please let this recipe call for equipment I don’t have, specifically a deep fryer, so that I won’t be tempted to actually make these.” And nope! Only a saucepan is required?! Grrr! :) Old fashioned doughnuts are my favorite, and adding a chocolate glaze that is darker and less sugary than what you’d get at a strip mall joint… dangerous!

I procrastinate and fidget and cook and sometimes clean and drink wine and talk to friends and mull it over and eventually it feels like my subconscious makes a decision and poof! That’s what I’m going to do. The end. Sometimes I wish life could be a multiple choice test (because I would be acing it), but there are so many options. That’s what makes life great, though.

  66. Oh, if you figure out the decision making process, please let me know. The bigger the decision, the more I hem and haw, letting the fear of choosing wrong keep me from choosing at all, and then that is a choice in itself. I talk to God a lot, try to be still and listen, and then when I think he’s answered, I overthink that too. That’s the big enemy for me, overthinking. I’m trying to make some decisions myself, and right now, I’m getting nowhere. Maybe doughnuts will help. Good luck with your decisions. I’ll pray for us both.

  69. Ok, that’s it, I’m making doughnuts. This is the third doughnut recipe I’ve seen in the last 2 weeks and it’s killing me. It’s gotten cold up here, and I had to go find a store that has wooly socks, so something yummy like doughnuts sounds really good! I didn’t pack my candy thermometer, just my meat one. Can you successfully interchange the two? If not, is there a clue that the oil is at the right temp?

    I’m all about the calories. Especially when they are fried and dipped in chocolate. Which also means that I’m totally not the type of person who makes decisions while I work out. Unless by working out you mean exercising my jaw muscles while there’s all sorts of tasty in my mouth. If that’s what you mean, then yes, I am that person.

    I once had a district manager who said that in times of stress, we need to “go to our Dons” (whooooooa Godfather reference). Basically, go to the people whose opinions sink the deepest, are heard the loudest, and whose advice has never failed you, no matter how hard it is to facilitate. For me, it’s my mom and dad, along with my best friend Kiki. They tell it to me straight. They ask questions. They *listen*. In the end, they know it’s my call, but I think the decision making process would be a lot less… clear without them.

  81. Decision making seems to get easier the older one gets. By now, I should be a whiz in that department. However, sometimes, as you’ve found out, eathing chocolate is far better than worrying. Keep baking, Joy. We love you the way you are.

  83. These chocolate donuts look devine. They remind me of the wonderful ones I would get at the bakery when I was a child. They don’t make them like that anymore!
    Anyway, now you have me inspired to write more lists. Lists and donuts…great therapy!
