It would seem that you can throw just about anything into an 8×4-inch loaf pan and have some sweet smellin’ magic come out of your kitchen after an hour or so. What’s more, pulling a beautifully risen quick bread out of the oven is sure to make you feel like your a prime-time, super legit baker.
Here’s a peek at my favorite quick bread recipes.
Oh! Happy Wednesday to you. Also… you look pretty today. I like what you did with your hair.
Low Fat Oatmeal Banana Bread. Still moist. Still all sorts of delicious. I even counted the Weight Watchers points on this one. Whaaaat!? Yea. That happened.
Raspberry Almond Bread. Yes, after it’s baked the bread turns a touch blue from the raspberries. What’s the science on that? Can we get Bill Nye the Science Guy on this one?
Zucchini Sweet Potato Bread. Fresh grated zucchini. Raw grated sweet potato. It’s unique, full of spice and delicious.
Chocolate Chocolate Chip Banana Bread. It’s chocolate. It’s for breakfast. If this offends you… I’m not sure what you’re doing here. I mean that with love and respect.
Lemon Drenched Lemon Cakes. Ok… so maybe this is more of a pound cake recipe than a quick bread recipe. This cake is too good to pass up. Lemon plus lemon syrup plus cake. I vote: awesome.
Honey Cranberry Cornmeal Quick Bread. Have any leftover cranberries in your fridge? Me too.
Fresh Mango Bread. I never would have thought to put fresh mango in bread until Dorie Greenspan told me it was ok.
Vegan Pumpkin Walnut Bread. Dense and moist. Who says you need butter and eggs to make awesome bread!? Whoever they are… kick ’em in the toe. They’re wrong.
Persimmon Bread. You are mighty strange persimmon bread, but I love you just the same.
Honey Whole Wheat Pound Cake. Dense. Nutty. It’ll charm your pants off. Be prepared.

I used the Honey Cranberry Cornmeal Quick Bread recipe with my 8th graders in a lab on quick breads. I was tired of them all making cinnamon bread, so I switched it up and had them all make different loaves to share and try. This one was a hit, surprisingly! They looked at me funny when I first showed them the recipe, but after they ate it, they came back for seconds!

Oh the poor plain wholesome good sister overshadowed by the buxom, flashy rock-your-world sister. I can only hope the sensible one is strong enough to handle the comparison. I’m taking them both to work tomorrow in a sort of social experiment. Fingers crossed for the plain sister !!

Hi Joy! I made the honey cornmeal cranberry cake last night and it’s amazing! The honey and the cornmeal are perfect together, and the cranberries give it just the tart contrast that cornbread needs. made the zucchini and sweet potato bread yesterday… so delicious!! just a side note – i used 2 C of king arthur whole wheat flour, 1/2 cup of brown sugar and generous 1/2 cup agave nectar, one small zucchini and one medium/large sweet potato. no cloves but the bread came out dense and moist and amazing. thank you!

And about the raspberries turning the bread blue, I just read about that in my new cookbook, The Art & Soul of Baking by Cindy Mushet. She says “When there is not enough acidity in the batter, you’ll see a ring of blue around the fruit pieces… However, if the batter is made with an acidic liquid, such as buttermilk, the problem is averted. This is one of the reasons that muffin/bread batters contain buttermilk instead of milk.”

Bill Nye? I’m not him. But I can answer your science question.
Cranberries, or more specifically the chemical found in them called cyanidin,is an acid/base indicator. Remember from science class looking at the pH of different chemicals and using some kind of indicator to tell you what was going on? In my class it was boiled purple cabbage. But cranberries do it too. When they turn blue it’s because the pH has gotten higher (more basic). In a batter, it’s usually from the baking soda or baking powder that we use for leavening.
I’m on a New Year’s diet, so I can’t eat the breads.. may as well contribute somehow!

Sweet! Perfect! You read my mind. I bought some fresh cranberries the other day (week) for the first time.. thought about using them in the oatmeal-cherry-white-chocolate recipe instead of dried cranberries. I asked my mom about whether to use fresh or dry and she said to use dry in the cookies, and fresh in a loaf. Well, I didn’t have a cranberry loaf recipe in mind, so I tried some last night on my yogurt.. yeah.. tasty but kind of hurt my tummy!

The raspberries turn blue in the cake due to a change in pH – probably more alkaline conditions. Similar to when red cabbage turns blue after cooking. (Check out Harold McGee for thrilling science information…)
