Watermelon Peach Caprese Salad

Yea. ย I definitely stood in the kitchen, staring at this gorgeous summer salad, wondering/hoping/wishing/longing to put all of these ingredients between two slices of bread to make an extra buttery, extra mozzarella-y grilled cheese.

I think watermelon in a sandwich might be out-of-bounds. ย I think this ultra fresh summer salad belongs on a plate with a knife and fork. ย I think I just want to turn everything into a grilled cheese sandwich.

Summery goodness! ย And the great news is that tomatoes and watermelon are only going to get better as we get deeper into summer.

Now excuse me while I go daydream more grilled cheese situations.

Watermelon Peach Caprese Salad

This salad is perfectly simple. ย Nature does all the heavy lifting. ย There are no tricks, just big beautiful summer flavors!

Watermelon is cut into squares, away from the rind. ย  Peaches are ripe and sliced.

Tomato is sliced thick. ย Mozzarella is sliced divine.

Fresh herbs, too! ย I like basil to compliment the tomatoes and mint to compliment the watermelon.

And we stack! ย Just layering juicy watermelon with fresh tomatoes and peach. ย Liberal amounts of olive oil and balsamic vinegar brighten the salad. ย Salt and fresh ground pepper make it dang near perfect.

Too easy? ย Too easy and so delicious.

This salad will also last a few days in the fridge. ย It’s durable and extremely satisfying. ย Happy days to us!

Ingredients

Scale
  • 8 to 10 slices fresh watermelon
  • 12 to 14 slices fresh tomatoes
  • 8 to 10 slices fresh peach
  • 8 to 10 slices buffalo mozzarella
  • fresh basil leaves
  • fresh mint leaves
  • olive oil
  • balsamic vinegar
  • salt and pepper

Instructions

  1. This recipe is so simple!
  2. Stack and layer together watermelon, tomato, peach, and mozzarella slices. Garnish with fresh basil and mint leaves.
  3. Drizzle liberally with olive oil and balsamic vinegar.
  4. Sprinkle generously with salt and pepper. Serve chilled. It’s delicious!

  1. I made this tonight and brought it to a picnic “music in the park” event and it was fabulous! We all enjoyed it. I have made peach caprese salads before but I loved the addition of watermelon and mint. Would be amazing with a white peach balsamic!

  2. I made this salad for our neighborhood block party. Everyone was very happy to have a healthy option and those “brave” enough to try the fun combination loved it. Also, now I have some wonderful balsamic and olive oil in my pantry which is always a plus. Thank you for the idea!

  3. I am obsessed with all varieties of caprese salads… I love peach capreses and watermelon capreses but never thought to combine the two- this looks amazing and I will be making it soon! I think I will probably reduce the balsamic because why not?!

  4. I fully support your ongoing grilled cheese quest. Sometimes I hear a little voice that says “But swimsuit season!” Then I remember the right way to get a bikini-ready body: Obtain a bikini, and put it on one’s body. Grilled cheese, here I come.

  6. I think I would personally prefer to sprinkle it with a good blue cheese than to include the mozzarella, but then again, it is harder to find decent fresh mozzarella around here.

    1. Ditto that! Nothing bespeaks summer like watermelon and peach. I love how you cut up that watermelon. Last summer I ate a whole watermelon (not kidding) almost every day. I gained 10 pounds. Couldn’t figure out why. But then I read that a watermelon the size I was eating had 1500 calories. Oops!

  8. I did turn a caprese into a grilled cheese Sammie. Had leftover ingredients and some bread. After grilling, I added some avocado and a bit if pesto. Yummy!

  11. This looks crazy good. Also, i’m thing that everything but the watermelon would make a damn fine grilled cheese. Maybe the watermelon could be in place of a pickle on the side?
