I like coconut quite a lot.

I love coconut.  It’s important to me.

It’s so important that this is the perfect time and place to expound my love in link form.

Real Talk:  I spent the morning in the kitchen with a new coconut recipe that bonkers FAILED.  I’ll get coconut, hazelnut, and chocolate together somehow.  It’s in the future.

Also… I’m one of those people that drizzles olive oil on everything savory.  It’s pretty.

Coconut flour is a gluten-free dream!  These cupcakes are made with coconut flour and fresh strawberries. Topped with cream cheese frosting.  Quit it!

These hearty gluten-free waffles are topped with big toasted coconut flakes and soft, sweet whipped cream!

Gluten-free Coconut Waffles ((coconut oil, coconut flour, coconut flakes!)).  They don’t taste weird gluten-free.  They do taste all-the-way awesome.

Crazy thing about the coconut in the Crunchy Kale and Coconut Bowl ((coconut flakes!))… dudes will think it tastes like bacon.  I’m serious.  It’s a transformer.  This meal is a drug… a healthy, kale drug.

    I’ve been feeling culinarically (?) uninspired and somehow googled into you. Yay! I lived in L.A. for eight years & I’m uncertain how our paths never crossed. I don’t know, when two people invest in so much butter & sugar in the same city, it feels wrong… I really enjoy your blog! I have one too but my camera sucks- ha! I’m in Chicago now & am going to do my best to not be working so I can make it to Wilmette for your book tour. I thinks its a bit of a drive but I like making the effort for kindred spirits. You bake with love. I don’t trust that everybody does, joy!! And everybody should!!! And I am so hungry right now.

  2. It’s true that coconut flour does react well in baked recipes, but I always hesitate to use it because it’s not a universally-liked taste. I tend to use almond powder more regularly.

    But I love coconut milk – and all these recipes look divine.

  3. I sort of can’t handle so much coconut love in one post. But I can totally handle it. I love me some crunchy kale (whoa! I just had to edit myself because I wrote Krunchy Kale like some sort of Kardashian had taken over my hands!), and I’m so excited to coconut waffles! THANK YOU FOR THAT ONE!

    we have a coconut farm near our province my mom always make a “Ginataan” sounds cool right its so delicious. oh btw nice perfect photos it just like an art done reading it thank you for sharing :)

  7. Can’t tell you the ridiculous pleasure I get from opening and flaking the beautiful flesh from a fresh coconut–it’s kinda sick!! You’d think I’d just discovered fire or something.

    Have you ever had the coconut ice-cream that comes in half a coconut shell? I went to a wedding once and lot of people didn’t like theirs… not such a shame for me!

    Have a big bag of dried stuff in my cupboard, will have to make some biscuits soon for sure… and goes so well on jam tarts… yum!

  10. I have the answer for your coconut, hazelnut, chocolate combo. Standard coconut loaf cake with gooey yummy nutella through the middle ;) yummy!!! Yes its very basic, yes its a bit childish but cold day plus cup of coffee plus coconut cake with nutella equals very happy office staff.

  13. Mmmm, I am coconut obsessed! I usually only ever eat the sweetened flaked coconut, but I am interested in trying the non-sweetened natural shredded coconut. I especially like the looks of that coconut and kale bowl :)

  16. I have a love/hate relationship with coconut. I really like it on shrimp, but so far that’s the only way I like it. I’ve tried making coconut macaroons, but I could only find sweetened coconut, which I did not like. So maybe if I can find shredded unsweetened coconut, I could learn to really love the stuff :)

  17. You should seriously consider visiting Kerala, India if you love coconut that much! I’m from there and my mom uses coconut in EVERYTHING she makes.. from every single curry to breakfast dish to pastry.. if you’re interested, look up south Indian cooking and you’ll find coconut as the main ingredient! :)

  18. I love coconut!! I’m guessing you already know this, but in case you don’t… did you know you can whip coconut cream? You just chill a can of full-fat coconut milk and then scoop out the hardened cream part. Whip it with beaters and voila! Coconut whipped cream! It tastes phenomenal and holds up pretty great!

  20. Those coconut waffles are a dream – they are so satisfying without leaving me in a waffle coma for the rest of the day. I can even see them stacked with chocolate as a dessert. And I love all the tips you had on Homefries for using coconut oil as a scrub, shaving cream, moisturizer, etc. Genius! Thanks for sharing

  21. Those are the prettiest coconut flakes I’ve ever seen! All your recipes sound amazing–I remember being awed by them when I first read those posts! They make my mouth water like the first time I laid eyes on them. :)

  22. Joy! Coconut is my favorite condiment, at least I use it as a condiment. It’s my dad’s fave and he introduced it to me early on it life. Ever since then I have been pairing it with anything I can get my hands on. My new fave is coconut peanut butter. I use a little coconut oil instead of peanut oil, and stir in toasted coconut flakes at the end. O my word! It is so funny that you posted this today because I literally just got finished making coconut almond scones. I used a mixture of coconut and almond flour with chopped almonds and fresh coconut! The kitchen smells amazing!

    Thank you so much for saying that something of yours failed. I’m sure it happens to food bloggers and cooks all of the time, but no one says so. It was extra nice to read a little about this morning as I am starting out on a quest to learn how to master different recipes/techniques this year (this year starting tonight as I spent January moving and learning to live without a spouse again). So. Biscuits are on the agenda tonight! Wish me luck!

  25. Coconut is my favorite fruit ever! Well… maybe together with mango. I am from tropics, so I grew up eating lots and lots of it. I wish coconut was not so expensive in California…

    I’m pinning all these recipes! Can’t wait to try them soon! Especially the desserts… YUMMY!

  27. LOVE coconut! I was in Thailand over the holidays in December and one night we found this guy on the side of the street selling home made coconut ice cream served in a (split right in front of us) young coconut half which we scraped the flesh out of once we reached the end of the ice cream, topped with coconut jelly, fresh coconut curls, and a drizzle of coconut milk. It was coconut heaven!

  29. I presume you have a more complex and sophisticated recipe in mind for your coconut-hazelnut-chocolate combo, but a few months ago I made a nanaimo bar spin-off using those ingredients that came out super well.

  30. I like the kale coconut bowl idea a LOT and my newest hobby is experiments with the coconut curry dishes–green, red, pineapple curries, I love them all. But sweetened coconut is something I might have to learn to like….
