Let It Be Sunday 15

April 12, 2015 by Joy the Baker 23 Comments

Let It Be Sunday

Hello my friends!

It’s Sunday and I hope you’re ready for some Spring sunshine and frothy cappuccinos.  Maybe treat yourself to a donut. Treat a friend to a donut.  Do things that make you smile.

I’ve been missing my California home these days.  Something about California air just feels familiar and settling to me.  You can take the girl outta California… but you can’t take California outta the girl (no matter how many times I try to say y’all).  Above photo by Jon Melendez (who just made a Jambalaya Pizza!!).

Enjoy this beautiful day.

Here’s the easy of the Internet this week:

•  We need to keep talking about this California drought business:  are almonds and other nuts really drought villains?

•  An art director on Why She Wears The Same Thing To Work Everyday.  In my world it’s more like, Why I Wear The Same Dress For A Week Straight:  laze and convenience and security.

•  5 Things You Should Know About Hillary Clinton.  Bonus thing:  she’s a boss.

•  From the series “Why I Teach”:  Why I Teach My Students To Be Brave.

•  Positive Thinking Doesn’t Work, Here’s What Does.  I mean… with a title like this you haaave to click, right?  Spoiler alert:  write a list and make a plan.

•  “There are only the pursued, the pursuing, the busy and the tired.”  50 of the most beautiful lines in The Great Gatsby.

•  Women Answer Questions Men Are Too Afraid To Ask.  On bras and why it takes us so long to get ready… straight face emoji.

•  It’s Spring and I feel like now is the time to put root vegetables in our desserts.  Don’t worry… it’s cool.  It’s going to be good.  I promise!  Chocolate Beet Cake with Chocolate Cream Cheese Frosting and Carrot Cake Cupcakes with Pineapple Cream Cheese Frosting.

•  Stuffed Portobello Mushrooms with Crispy Goat Cheese.  I’d eat my fill.

•  What if your name was Beyonce… but you weren’t Beyonce.  Are You Beyonce, Beyonce, or Just Regular Beyonce?  It’s complicated.

Have a most lovely Sunday!

xo Joy

Thank you so, so much Joy for sharing my mushrooms (–> oddest sentence ever? HA!)! I got married this past Saturday, so I can’t tell you what a pleasant surprise it was to see this the next morning. I absolutely adore your Let It Be Sunday series! :)

Those are not the 5 things that come to mind when I think of Hillary. Love your cooking though!

So many kick ass women here but that art director gets my vote for finding a classy way to cut through the double standards in office/gender exceptions. As I work from home rather than an office my question naturally is: do my pajamas count as a uniform; and then does my cat count as a male colleague? He’s definitely judging me. Also I think I should start every day by reading through those Gatsby quotes. Life would definitely be better.

Friends! Here’s the easiest, most roasty toasty Friends! Here’s the easiest, most roasty toasty Friendsgiving appetizer: Toasted Marshmallow Sweet Potato Bites and, our secret ingredient: @bluemoonbrewingco’s Pin Pint Seasoning. #ad #21+ #BlueMoonSeasonings⁣
⁣
Here’s what you’ll need to make them: ⁣
-	Sweet potatoes, peeled, sliced ½-inch thick and cut into 1 ¾-inch rounds using a sharp cookie cutter⁣
-	Olive oil⁣
-	A generous sprinkle of Blue Moon Brewing Co’s Pie Pint Seasoning⁣
-	A sprinkle of pumpkin pie spice and ground coriander⁣
-	A generous sprinkle of flaky sea salt⁣
-	Round butter crackers (like Ritz)⁣
-	Large marshmallows, cut in half⁣
⁣
Preheat the oven to 400 degrees F. Arrange sweet potato rounds on a parchment lined baking sheet and drizzle with olive oil. Toss to coat. ⁣
⁣
Sprinkle generously with Pie Pint Seasoning, pumpkin pie spice, coriander, and sea salt. Roast until tender, flipping once through baking – about 20 minutes. ⁣
⁣
Remove from the oven and, once cool enough to handle, layer each sweet potato round on a butter cracker on an unlined baking sheet. Top each with half a marshmallow. ⁣
⁣
Set the oven to broil and place the bites under the broiler. Keep a very close eye on the marshmallows as they’ll burn in literal seconds. Remove from the oven and enjoy warm or at room temperature with a Blue Moon Belgian White Wheat Ale, of course!
