Everything I actually make for the Thanksgiving table: the pies worth heating the oven for, the sheet cakes that feed twenty without a fuss, and the ones you can make days ahead so Thursday is not a disaster.
Here is the thing about Thanksgiving dessert. Everyone acts like it has to be pie, and then four pies show up and nobody has room. So I have sorted this by the decision you are actually making, not by what is in it.
The pies, if you are doing pie
Sweet Potato Pie is the one I would put on the table before pumpkin, and I will not be taking questions. Classic French Silk Pie is my favorite non-pumpkin thing on the whole table, silky and cold and not too sweet. Fluffy Cranberry Cream Pie is the pretty one, tart against all that richness. And if someone at your table wants something bright at the end, Lemon Meringue Pie with Citrus Spiced Sugar Cookie Crust does that job beautifully.

What to make if you do not want to make pie
A sheet cake. Truly. Brown Butter Pumpkin Texas Sheet Cake is enormous, nutty, and travels flat, which matters when you are carrying dessert across town. Apple Cinnamon Texas Sheet Cake is the apple version of the same idea. And Pumpkin Spice Tiramisu needs no oven at all, which on Thanksgiving is worth quite a lot.

The cozy ones nobody argues about
Sit and Stay Awhile Apple Crisp is the recipe I make most in the fall, crunchy oat topping and no fuss whatsoever. Pumpkin Bread with Walnuts keeps for days and doubles as breakfast on Friday. Bread and Butter Bread Pudding is what I make when I want the kitchen to smell like something and I do not want to think very hard.

Cookies for the table (and the people who do not like pie)
They exist, and a cookie plate is the quiet hero of the dessert table because it travels and it keeps. Taylor Swift’s Chai Sugar Cookies are cozy and a little bit famous. Browned Butter Oatmeal Apple Cookies are the ones I make on repeat this time of year. The New Classic Snickerdoodle is the one that makes the whole house smell like fall.

What can I make ahead of Thanksgiving?
Most of this, honestly, and that is the real trick. Loaf cakes are the most forgiving: Cranberry Orange Loaf Cake and Gingerbread Swirl Bundt Cake are both better on day two, and The Perfect Cinnamon Bundt Cake holds beautifully. Cookie dough freezes, so you can scoop it now and bake it Thursday morning. The cream pies want to be made the day before, and the crisp is the one thing I would bake fresh, because a warm crisp is the whole point.

How much dessert do I actually need?
Two or three things, not five. One pie, one thing that is not pie, and something to pick at with coffee afterward. That is the whole formula, and it means you get to sit down at your own table.
