Let It Be Sunday, 172!

Hello dear friends!

I’ll tell you what – if you dream of hosting a pop-up bagel shop in your backyard one day, all it takes is many MANY batches of this bagel recipe, a very early wakeup call, several batches of homemade flavored whipped cream,  a few friends to help you bring all of your inside furniture out to the backyard, a portable speaker with a Drake playlist and BOOM – you’ve got yourself a bagel shop.  

Truth be told, it’s an insane amount of work but I think that’s what it takes to make your own dreams come true.  Hard work and good friends.  This weekend was likely the last Bakehouse event until the Fall.  I’m taking some time off this summer to do the dishes and do things other than dishes, ya know?

It’s been a complex week. Here are a few of the things that struck me: 

•  This week on Fresh Air, an incredible interview with the late Tom Wolfe.  ‘Arrive in any situation as a man from Mars’.  If you are only able to listen to part of this interview, the last half with Terry Gross about not trying to fit in is very compelling.  (NPR)

•  I’m working through two long reads this weekend and I’ll share them with you here if you’d like to join me: The Untold Story of Robert Mueller’s Time In Combat and The Nine Minutes That Almost Changed America. (Wired and Buzzfeed)

•  What Happens To All The Plastic We Throw Out? Spoiler alert: it’s not great, and this reality is awful. (National Geographic)

•  The new plan to defund Planned Parenthood, explained.  It’s very important to know what’s going on here.  (Vox)

•  This really feeds my obsession with Mt Everest. Double Amputee Summits Everest (Outside)

•  Again.  Santa Fe High School Student Says She Wasn’t Surprised By Shooting. (The Cut)

•  These words are about growing up, communicating our boundaries, and showing compassion – DANG POLLY THANK YOU!  Ask Polly: Should I Dump My Toxic Friend? (The Cut)

•  Truthfully, I didn’t think I was into the royal wedding until I saw the true love shining through Harry and Meghan.  And Stand By Me made me cry so… I guess I’m officially into it. (Vox)

•  Standing in front of the vast array in the olive oil section is definitely intimidating. The Best Olive Oil You Can Buy at the Grocery Store according to Tasting Table.  California Olive Ranch is my favorite, too! 

•  14 Secrets of Costco Employees.  (Mental Floss)

•  If you’re in the business of making a birthday cake for someone soon:  Everybody’s Birthday Cake.  And while we’re talking cake, Adriana’s Strawberry Milk Tres Leches Cake looks lovely.   (Joy the Baker and A Cozy Kitchen)

•  I’m here to fully admit to wearing body makeup when I want to look sun-kissed and like my skin actually bronzes to tan instead of burning to a crisp.  This is my favorite:  Body Blur.

    I was horrified to see that plastic has reached the deepest part of the ocean. A plastic bag in Mariana Trench!! It is HORRIBLE!!!

    Also, the royal wedding was everything!

    I’m a huge Anglophile, so I wasn’t shy about my anticipation of the wedding– and it was everything I needed and more. The way he looked at her– geez, may I never settle for a half-assed guy again. I’m in it for the Harry look.

    Have you ever read Jon Krakauer’s Into Thin Air? It’s such a fabulous book about the 1996 disaster.
    I taught it with and English teacher in our Biology/English team classes.

    Reading your weekly Sunday post is legitimately one of my favorite parts of my week! Every week there is something that really makes me think, and you always find great articles I haven’t seen anywhere else. There are so many great food and lifestyle blogs out there, and I keep coming back to yours for your authentic voice and great pieces like this. Thanks for putting this together every week!

    I can’t tell you how much I love you for having a political opinion and expressing it. Most other food bloggers pretend to be neutral, to not alienate their fan base, and while I understand that on some level, we don’t live in ordinary times. As far as I’m concerned, the only neutrality that interests me is of the Net. It’s a time to stand up and voice our opinions, and you’re doing it with class, yet pointedly, every Sunday. Thank you.

    I had the same feelings about the Royal Wedding, but then I saw a few pictures online and got hooked! They looked so in love, it’s hard not to enjoy the celebration.

    I am so interested in the behind the scenes of a popup bagel shop! Something like that would be a hit here, but it’s such a headache to deal with permits, especially when food is involved. I tried to get my kid’s PTA to do a taco night (no Mexican restaurants around here) and got shot down over all the regulations. Even bake sales are no-nos.
    Still, things are getting a little more open. I see other kinds of pop-up shops for clothes, soaps, etc. I’m sure others also would be interested in how you managed.

    Finally making it to New Orleans this coming weekend. You seem to love it so much I felt that I must visit. I wish you were having a bake class this Saturday. Looking forward to a wonderful breakfast there.
    Since I am spoiled by your baked donuts recipe (which I make at least once a month) do you recommend a place for breakfast near the french quarter. We are scheduled for the plantation tour for the day.
    so excited and I just can’t hide it.

⁣⁣
Two Easy No-Yeast Bagels⁣⁣
1/2 cup self-rising flour⁣⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)⁣
1 large egg, beaten for egg wash⁣⁣
1/3 - 1/2 cup grated gouda or gruyere⁣⁣
Everything bagel seasoning⁣⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣⁣
⁣⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣⁣
⁣⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣⁣

Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣⁣
⁣⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣⁣
⁣⁣
Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
