Let It Be Sunday, 329!

Hello dear friends! Happy 4th of July weekend! I love this particular weekend of the year. It feels like we’re smack dab in the middle of summer with way fewer urgent Friday emails and more Mondays off. 

This week my heart has been with everyone affected my the condo collapse in Florida. It’s just the scariest thing when the unfathomable becomes our reality. I don’t know what more to say about it, but it’s been on my mind nonstop. 

I’m headed off for a weekend camping trip in Jasper Texas. I’m mostly looking forward to making shortribs over the fire, spending time with Will (of course), and listening for fireworks in the distance.  Also watermelon. Also cherries. There’a a lot to look forward to.

Currently reading: Outlawed by Anna North (I can’t put it down.) Currently eating: vegetables from my sister Launa’s garden sent all the way from California (see the bb artichoke pictured above). Currently craving: the Wilson Family Texas Sheet Cake.

•  A transcript of The Declaration of Independence Have you looked at the paperwork? We’re an imperfect but hopeful lot.  (Archives.gov) 

•  A vintage article I read this week: How Much Suffering Can You Take? So far, about 8 miles worth. (The New York Times) 

•  Speaking of suffering. It’s hotter than the human body can handle in Pakistan. So, ya know.  (The Telegraph) 

•  No one asked for this and yet, Flash Mobs Are Back Baby.  What, did we not get enough of this second hand embarrassment in 2011? I think the difference in this decades iteration of flash mobs is that they’re smaller and everyone is used to people make Tik Tok videos in public so we very much don’t care anymore. Thank you to my friend Karlee for bringing this all to my attention on Instagram. Karlee what have you done?  (Vice, YouTube, Instagram)

•  Cheryl Sparks is so chic, here’s a week of outfits. (Cup of Jo) 

•  Some of the best advice I can give you is to read every book Toby recommends. Here’s Toby’s Summer 2021 reading list. (What’s Up Moms) 

•  I’ve got my eye on this point and shoot camera recommended by my photographer friend Trevor. It’s the kind of camera you can have lying around that anyone can pick up and take pictures with. It’s not your phone. It’s such a Dad-Camera, waterproof and shockproof – it’s going to be my summer adventure camera. (B+H Photo) 

•  Thank you so much for all the feedback about your favorite old recipes here on Joy the Baker. It was really so helpful and wow y’all really reminded me of some old gems here.  I completely forgot about the Peach and Raspberry Crumble – you can’t go wrong with that super summer combination.  I’m working the next few month on updating old recipes on the site. For those of you who like JtB just as it is, don’t fret – all the good stuff will be here in mostly the same fashion. I just digging into the nuts and bolts of the back end to clean things up.  In terms of updates, see: Cookies and Cream Chocolate Chip Cookies. (Joy the Baker) 

•  The Bakehouse Nola is taking the summer off but we’ll be back with a full line of classes and events in the fall! I’ll also be teaching a few classes very casually on Instagram Live on July 10th and July 19th if you still want your baking fix!

    You are only a few minutes away from me, we are living in Hemphill, TX (due to Hurricane Laura damaging our home in Iowa, LA). If you get a chance go to Junktique, it’s the cutest antique shop on the highway there in Jasper, Tx. Also good food with the best desserts at the Cedar Tree restaurant. I love your blog and enjoy your cookbooks! Enjoy your camping in the beautiful Piney woods of East TX!

    UGG, camping in East Texas in the summer. I am currently 25 miles from Jasper and have endured the rain this whole weekend; plz keep your mosquito repellent handy.
    Thank you for the introduction to Cheryl Sparks, who is such an inspiration. BTW, I love Flash-Mobs; when I watch a string of videos, they bring tears to my eyes, especially the orchestra assembly where people stop and listen and seem so amazed at beautiful music.

    Happy 4th weekend, Joy! I hope you rolled around in all of the goodness, and tucked the memories away to relive time and again. That’s what I’ve really learned while living away from our adult girls. Just cover yourself in all of the happy vibes, and don’t be sad that it’s over. More will come.

    As the Irish call it, I’m an Ink Drinker; a voracious reader, so thank you for a great Summer reading list.
    Peach and berry crisp will be made. Summer reads. Family, and taking is the rays. The seasons do go by quickly.

    I read last night a sentence that resonates with me; “I take comfort in the rhythm of the seasons”. That’s me. I like how that sits.

Just tryna get the most cheese on my most simple s Just tryna get the most cheese on my most simple small-batch bagel recipe. Get in on this with me: ⁣
⁣
2 Easy No Yeast Bagels⁣
1/2 cup self-rising flour⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)
1 large egg, beaten for egg wash⁣
1/3 - 1/2 cup grated gouda or gruyere⁣
Everything bagel seasoning⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣
⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣
⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣
⁣
Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣
⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣
⁣
Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.

For the rolls: ⁣⁣
• 3/4 cup lukewarm milk⁣⁣⁣
• 1 large egg⁣⁣⁣
• 1 large egg yolk⁣⁣⁣
• 6 tablespoons unsalted butter, softened⁣⁣⁣
• 3 cups all-purpose flour, plus more for dusting⁣⁣⁣
• 2 ¼ teaspoons instant yeast⁣⁣⁣
• 2 tablespoons light brown sugar⁣⁣⁣
• ¾ teaspoon salt⁣⁣⁣
• ½ teaspoon vanilla extract⁣⁣⁣
⁣⁣⁣
For the filling:⁣⁣
• 1/3 cup unsalted butter, softened⁣⁣⁣
• 1 cup brown sugar, packed⁣⁣⁣
• 2 teaspoons ground cinnamon⁣⁣⁣
⁣⁣⁣
For the icing:⁣⁣
• 4 ounces softened cream cheese⁣⁣⁣
• 1 cup confectioners’ sugar or glazing sugar⁣⁣⁣
• 1 tablespoon milk⁣⁣⁣
⁣⁣⁣
1. To make the dough, place all of the dough ingredients in the bowl of a stand mixer fitted with a dough hook. Mix on low until the dough begins to come together. You may want to speed up the process by first mixing all of the ingredients together by hand with a spatula before putting the bowl on the stand mixer. This will help the dough hook work. The dough will come together into a soft, though not too sticky dough ball after several minutes of hand mixing and stand mixer mixing.⁣⁣⁣
2. Place the dough in a lightly greased bowl and lightly dust the top of the dough with flour. Let rise for 60 minutes while you prepare the filling and icing.⁣⁣⁣
3. To make the filling: Combine the butter, brown sugar, and ground cinnamon into a paste. Set aside.⁣⁣⁣
4. To make icing, whisk together cream cheese and sugar. Add the milk and whisk until smooth.  Place in a small bowl and refrigerate. ⁣⁣⁣
5. Roll the dough into a 18 x 12 inch rectangle.⁣⁣⁣
6. Spread the cinnamon filling evenly over the dough.⁣⁣⁣
7. Beginning with one long edge, roll the dough into a log. Cut the log into 8 or 10 equal slices. Place the slices in a greased 9×13-inch baking pan, cover with plastic wrap, and let rise for 30 minutes. ⁣⁣⁣
8. Place a rack in the upper third of the oven and preheat the oven to 375°F.  Bake the rolls for 30 to 35 minutes, until they’re golden brown and bubbling. Remove the rolls from the oven.⁣⁣⁣
9.  Drizzle icing over the warm buns and enjoy! ⁣
