Let It Be Sunday, 333!

Hello friends! Welcome to Sunday! 

I was lucky enough to spend most of my week at a fancy pool in Puerto Vallarta, Mexico with two dear girlfriends who also turned 40 this summer.  For years Whitney, Dean, and I called ourselves the DeCadillac sister after a silly and mildly boozy night in New Orleans when we made up posh alter-egos. My name is Claudette DeCadillac and she can mostly only be found on vacation ordering more tacos and a her second margarita. She’s a very fun time, but never too posh to make an absolute fool out of herself trying to synchronize swim in a shallow pool.  That about sums up out sister vacation. 

There’s something so lovely about pressing pause the way vacation can encourage. It’s such a luxury to just floating through a summer day into the next. Now I’m back in New Orleans, watering the very thirsty plants and according to my best intentions I’m unpacking my suitcase before the weekend’s end.  

I hope this finds you well, with at least a few minutes to yourself this morning. It’s another summer Sunday and I hope your big plans include cold watermelon and some sort of body of water (for me, it’s walking down to the river today).  The offering this week is below. Take only what you need:

    Hi Joy. Beautiful photo and so glad you had a fun vacation. My grandson is in the Olympics. Won the gold in Rio in 2016. Wrestles this weekend. Nervous wreck, I am!

    What a pretty picture of you at the beginning of this post! You look very relaxed and with the heat that most of us are experiencing this summer, that’s quite a feat. I’m in the Chicago area and we’re also having the haze from the awful fires in the west. It makes it appear very gloomy here but nothing like what those poor people must be going through. Hearts go out to them Have a safe and wonderful week…

    VaVacations are surely a time to break from the daily grind for sure. I spend tje summer in Vermont with my daughter and grandchildren. It is a real break from mu “real” life in California during the rest of the year. It is a small world and a slower life. I spend time going to tourist sites but also spend time on the river and lakes near by and life a slower and easier life. It recharges me to live the rest of the year.

Two Giant Peanut Butter Cookies⁣
(or four smaller cookies) ⁣
⁣
1/4 cup unsalted butter, melted⁣
1/3 cup brown sugar, lightly packed⁣
1 large egg yolk⁣
A splash of vanilla extract⁣
1/4 cup peanut butter⁣
1/2 cup all-purpose flour or a gluten-free flour blend⁣
1/4 teaspoon baking soda⁣
1/4 teaspoon salt⁣
Coarse sugar and/or sea salt for sprinkling, optional⁣
⁣
Place a rack in the upper third of the oven and preheat oven to 350 degrees f. Line a small baking sheet with parchment paper and set aside. ⁣
⁣
I’m a medium bowl, whisk together warm melted butter and brown sugar. Whisk in the egg yolk and vanilla extract. Add the peanut butter and mix to combine. ⁣
⁣
Add the dry ingredients and use a spatula to fold all the ingredients together. Divide in two big portions (or four smaller portions) onto the prepared baking sheet. Sprinkle with sugar and salt if you’d like. ⁣
⁣
Bake two giant cookies for 12-14 minutes, or four cookies for 10-12 minutes. Allow to cool for a few minutes before serving with cold milk.

I spent the weekend with Will and my family in Sou I spent the weekend with Will and my family in Southern California and there were sailboats, and vintage cars, and paddle boarding, and so many family laughs, and cookouts, and holding hands with my handsome boyfriend in a backwards baseball cap (WHY IS THAT SO SEXY?) but - the way we ordered a second TOWER OF ONION RINGS for the table at lunch was like….
