Sweet + savory goodness wrapped in a flakey puff pastry? Yes please. These Monte Cristo-ish sausage rolls star Seemore’s Sweet Potato Sage breakfast sausages. They’re filled with humanely raised chicken, sweet potato, sage, and brown sugar! We wrapped them in frozen puff pastry with raspberry jam and melty brie for a festive breakfast treat.

Sweet & Savory Breakfast Rolls from Seemore Meats & Veggies

Ingredients

Scale
  • 1 package of Seemore’s Sweet Potato Sage breakfast sausage (6 links)
  • 1 sheet of frozen thawed puff pastry, cut into 6 rectangles
  • 6–7oz. Wedge of brie sliced into ¼ inch slices.
  • ¼ cup of raspberry jam + more for serving
  • 1 beaten egg
  • Powdered sugar to top

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Gently stretch one rectangle of puff pastry so you have room to crimp shut after stuffing.
  3. Spread a thin layer of raspberry jam along the middle of the rectangle. Add your Seemore sausage link, and tear a piece of brie to top and spread evenly along the sausage/jam.
  4. Crimp the two ends of the puff pastry shut. Pinch thoroughly and then fold down. Place sausage roll seam side down on prepared baking sheet. Repeat the process with your remaining puff pastry + sausages.
  5. Brush beaten egg over each sausage roll to ensure they get nice and golden. Gently score sausage rolls to help puff pastry cook evenly and rise.
  6. Bake for 13-15 minutes or until golden brown.
  7. Remove from the oven and dust with powdered sugar. Serve with a side of additional raspberry jam for dipping and enjoy!

    I don’t often get excited about sausage, but sausage with 35% veggies is EXCITING!! Just ordered The Whole Shebang and looking forward to incorporating these into my meal plan. Thanks for sharing – always love a good tip!

Two Giant Peanut Butter Cookies⁣
(or four smaller cookies) ⁣
⁣
1/4 cup unsalted butter, melted⁣
1/3 cup brown sugar, lightly packed⁣
1 large egg yolk⁣
A splash of vanilla extract⁣
1/4 cup peanut butter⁣
1/2 cup all-purpose flour or a gluten-free flour blend⁣
1/4 teaspoon baking soda⁣
1/4 teaspoon salt⁣
Coarse sugar and/or sea salt for sprinkling, optional⁣
⁣
Place a rack in the upper third of the oven and preheat oven to 350 degrees f. Line a small baking sheet with parchment paper and set aside. ⁣
⁣
I’m a medium bowl, whisk together warm melted butter and brown sugar. Whisk in the egg yolk and vanilla extract. Add the peanut butter and mix to combine. ⁣
⁣
Add the dry ingredients and use a spatula to fold all the ingredients together. Divide in two big portions (or four smaller portions) onto the prepared baking sheet. Sprinkle with sugar and salt if you’d like. ⁣
⁣
Bake two giant cookies for 12-14 minutes, or four cookies for 10-12 minutes. Allow to cool for a few minutes before serving with cold milk.
