Ginger Peach Lemonade

Peak summer sipping is when fresh peaches meet juiced lemons and a knob of fresh ginger. A pitcher of this peach lemonade is the most refreshing answer to these dog days under the sun.

Summer came on fast and furious didn’t she?  It’s like we looked up from spring’s short visit to skies blanketed in wild fire smoke and an unrelenting summer sun.  Summer is my season, tho.  I’d much rather be melting that frozen.  I don’t mind a thick humidity and a constant sweaty glow.  The only thing that can get me down in the summer is feeling dehydrated which… well, every other hour I feel dehydrated.

I want my summer drinks sweet and fruity. Sparkling is a bonus. Ice cold is non-negotiable.

I’ve been making fancy lemonades for the past few summers and when it’s made right, a pitcher is gone in a flash.  I think a plain lemonade can feel a little…. thin.  Add another summer fruit and a whirl in the blender? We’ve got some body, baby!

This particular peach lemonade can be made with overly ripe peaches or peaches who’ve languished in the fridge too long.  It’s very forgiving.

You might also try Fresh Blueberry and Mint Lemonade and bright pink Beet Lemonade.  Stay fresh, stay colorful, stay hydrated!

For this peach lemonade, you’ll need these ingredients:

•  fresh peaches, skin and all (though store-bought frozen peaches will do in a pinch)

•  fresh lemon for juicing

•  an inch-long piece of fresh ginger

•  brown sugar or granulated sugar

•  and filtered water

We’ll need a blender and a sieve to strain the lemonade.  It’s also nice if you have a lounge chair under an umbrella right by the pool.  We’re out here living our most hydrated, luxurious lives!

Description

A summer sweet pitcher of lemonade.


Ingredients

Scale
  • 3 ripe peaches, pitted and coarsely chopped
  • 1 scant cup brown or granulated sugar (not packed into the measuring cup)
  • 1-inch fresh ginger, don’t worry about peeling it
  • 1 1/2 cups fresh lemon juice
  • 4 cups water
  • crushed ice for serving

Instructions

  1. In a blender combine chopped peaches (skin and all), sugar, ginger, and lemon juice. Blend to a smoothie-like consistency.
  2. Pour into a fine mesh strainer placed over a medium bowl and press the mixture through the fine mesh strainer leaving some of the peach skin and pulp behind. Discard what is left in the strainer.
  3. Pour the strained peach and lemon mixture into a pitcher. Add 4 cups of water and stir. Taste and adjust accordingly.
  4. Pour over crushed or cubed ice and enjoy!

    Question:,what kind of ginger do you use? Already ground? Do you buy and use a grater? Any links to what you use?

      Hello! Joy uses a fresh small knob of unpeeled ginger, blended together with the other ingredients. All you gotta do is strain it and you’re good to go!

    I really enjoy the ginger peach taste so this recipe for peach lemonade seems really inviting. I am eager to try it to quench my thirst since it contains some of my favorite flavors. Since the heat is on this is a great way to hydrate instead of simply drinking water. Thank you. Will an organic dried ginger mix well in this instead of fresh?

      Hi Sue! I haven’t tried this recipe with dried ginger but I bet if you mixed it with a small amount of liquid to start, it would incorporate just fine! Hope this quenches your thirst!

Two Easy No-Yeast Bagels⁣⁣
1/2 cup self-rising flour⁣⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)⁣
1 large egg, beaten for egg wash⁣⁣
1/3 - 1/2 cup grated gouda or gruyere⁣⁣
Everything bagel seasoning⁣⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣⁣
⁣⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣⁣
⁣⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣⁣

Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣⁣
⁣⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣⁣

Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
