I spend a lot of time alone in my kitchen creaming butter and doing the dishes.  I spend a fair amount of time at my desk writing recipes and reading your comments.  There is even more time spent standing over my counter trying to take pictures of coffee cake while I cat tries to paw at the frosting.  There are a lot of little pieces that have to come together to make the wheels turn in this little space.

The very best thing about the wheels turning on this little Joy the Baker train (if you will…) is YOU!  Seriously.  Thanks to Instagram, and your clever @joythebaker tags, I get to see what has travelled from my kitchen counter to yours!  It’s incredible!  You, my friends, are out there killin’ it!  You’re making magic happen in your kitchens and I couldn’t be happier!

These Brown Butter Baked Doughnuts are so dang photogenic and delicious, it’s almost obnoxious.  You nailed it jenny_mitchell!

You know how to get down with the Bourbon Banana Bread from my cookbook.  I so appreciate that you have it in your kitchen and you pull it out to make bread!!  Nicole, you know you’re incredible, and sashlajefa… amazing!

Mashed Potato Waffles with Cheddar and Chives. I mean… this might be one of my favorite recipes ever.  I applaud your taste and your chive sprinkling skills, kprood!

Tomato Cobbler with Blue Cheese Biscuits and these Baked Eggs from my Mother’s Day collaboration with Honestly Yum.  Totally dreamy!  kelseycolette and hilaryamyers!  BOOM!  Doin’ it! Also.. can I borrow your round casserole dish?  K. Thanks.

I see you’re making Banana Rum Cake from the cookbook dustinscupcakes!  You’re doing it right, as per usual!

    Funny how technology does have away of keeping everyone all connected even though it does feel often you are just alone in your kitchen doing the dishes :-)

    This year has been a rough one for me, while doing my thesis I realized that I wanted to do a totally different thing with my life: cooking!! and thanks to the infinite power of procrastination I found your blog and omg I couldn’t be happier :) between text books I baked delicious coffee cakes, cookies, biscottis, pancakes and bread <3 so thank you Joy, I found what truly makes me happy and that it's my kitchen, dancing and singing between butter, sugar and vanilla. If I ever get one of those fancy phones, I'll tag my "creations" because you've inspired me in too many ways. Have an awesome week and thanks again for sharing your recipes, they're the shit <3

🥯🥯 for the weekend, babes! Save this no-yeas 🥯🥯 for the weekend, babes! Save this no-yeast bagel magic for your Sunday morning. ⁣
⁣⁣
Two Easy No-Yeast Bagels⁣⁣
1/2 cup self-rising flour⁣⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)⁣
1 large egg, beaten for egg wash⁣⁣
1/3 - 1/2 cup grated gouda or gruyere⁣⁣
Everything bagel seasoning⁣⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣⁣
⁣⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣⁣
⁣⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣⁣

Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣⁣
⁣⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣⁣

Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
