One-Pot Wonders

February 15, 2022 by Abby Mallett 13 Comments

Have you ever been so overwhelmed that loading the dishwasher seems like a phenomenal task? I am but a singular lady living in a studio apartment. Every day I marvel at the sheer amount of dishes I collect in a few short hours. Cups on my nightstand, plates on the TV tray (2 feet away from my nightstand), coffee and tea mugs on my kitchen island (3 feet away from the TV tray). And if I cook?! Oh, it’s all over. Somehow, I deploy every dish in my kitchen’s arsenal. The stovetop resembles the aftermath of a rugby game – and it rained.

For those living with roommates and/or families, I cannot imagine the magnitude of dishes collected daily. May your sinks ever be emptied and cleaned by an unknown source that is not you. May the benevolent blue Dawn make her Powerwash products to shine upon you. It’s rough out here! I will light a candle.

In the meantime, we still have to eat! It is wild that after you make a meal, you’re going to have to make another meal. Being indoors 1000% more made this fact impossible to understand – my brain refuses to absorb it. To make things easier on you and me, here are 5 recipes guaranteed to satisfy, but not add to the looming dish pile.

Freshly cooked Dutch baby sprinkled with chocolate chips and brown sugar

•  Chocolate Chip Dutch Baby – I’m going to be completely honest, I want you to have chocolate for breakfast. You deserve chocolate for breakfast. That’s it, that’s all.
•  Breakfast Jambalaya – In essentials, this is meant to fortify your soul. Firstly, it is hearty and robust and could be eaten at any time of the day. Secondly, if a biscuit or some hash browns showed up next to it, no one would bat an eyelash. In fact, you would be celebrated.
•  One-Pot Baharat Chicken and Rice –  Chicken and rice is a comfort food that spans cultures. At any given time, I’d walk into my grandmother’s house on the South Side of Chicago to a pot of chicken and rice cooking on the stove. Moreover, it was her love in physical form. This beautiful Israeli version is aromatic and warm, and should be shared with loves old and new.

•  No-Chop One-Pot Chicken Meatball Dinner – The beauty of this dish lies in its versatility – use this opportunity to empty your fridge or freezer and add the ingredients that work. I see this as a perfect weeknight meal, when your brain can’t make another decision.
•  One-Pot Chocolate Sheet Cake – There is something incredibly sacred about eating chocolate cake directly from the refrigerator – especially after everyone has gone to bed. This cake gives you that exact opportunity, let it love you!

Family of five here and we frequently COOK three meals a day. So. Many. Dishes. Not unusual to run the dishwasher twice in a day. That dutch baby pancake is going to make my kids so happy.

I read quickly and feel seen as I had a lively discussion with my partner about dishes etc. Ugh. And while I now see i the author’s name in the upper spot by the title, I was confused about the voice of this post originally. Hello Abby and lovely to hear more friends of Joy collaborating. That being said, perhaps a quick sentence beginning each post about contributors similar to “Let it Be Sundays?”
It’s been a week and we’ll make it through.

I was confused, as well. Especially with the lovely picture of Joy that begins the post. The content is great, but clarification between contributors would be helpful. Blessings!

I made these Almost Almond Croissant with a sheet I made these Almost Almond Croissant with a sheet of puff pastry and half a log of almond paste. Consider this a max volume weekend treat. ⁣
⁣
You’ll need:⁣
- A thawed sheet of puff pastry, fridge cold⁣
- 3.5 ounces or half a log of almond paste cut into 12 even-ish pieces⁣
- An egg beaten for egg wash, with a splash of heavy cream and a glug of vanilla bean paste for extra luxury⁣
- Sliced almonds⁣
- Powdered sugar ⁣
⁣
Lightly roll a sheet of puff pastry and slice into six rectangles. ⁣
Brush each rectangle with egg wash. Arrange each with two slices almond paste. Pull two corners of the puff pastry up and over the paste, pressing lightly to seal. Brush lightly with egg wash. ⁣
⁣
Transfer to a small, parchment lined baking pan and allow to rest in the freezer while the oven preheats to 425 degrees f. ⁣
⁣
Bake from chilled for 12 minutes. Remove from the oven and again lightly brush with egg wash. Top with almond slices and bake for 6-8 minutes more. Keep an eye as to not burn the almonds. ⁣
⁣
Remove from the oven and allow to cool slightly before dusting with powdered sugar and enjoying warm.

Just tryna get the most cheese on my most simple s Just tryna get the most cheese on my most simple small-batch bagel recipe. Get in on this with me: ⁣
⁣
2 Easy No Yeast Bagels⁣
1/2 cup self-rising flour⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)
1 large egg, beaten for egg wash⁣
1/3 - 1/2 cup grated gouda or gruyere⁣
Everything bagel seasoning⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣
⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F. Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣
⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣
⁣
Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣
⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots. Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds. Use a slotted spot or spatula to transfer the bagels on top of the cheese. Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣
⁣
Bake for 20 - 22 minutes until deeply golden and bubbling. Allow to cool for 10 minutes before slicing and smearing with cream cheese.
