Okay, this is the one I make the second good berries show up, and it’s actually blueberries AND blackberries bubbling under a soft, golden biscuit top, because why pick just one. Toss the berries with a little cornstarch so the juices thicken instead of running everywhere, and serve it warm with ice cream. Always ice cream.
Blueberry Extra Crumb Coffee Cake
Emphasis on the EXTRA crumb. It’s a tender blueberry cake buried under an actual mountain of buttery streusel, the kind that shatters a little when you cut it. Toss your blueberries in a spoonful of flour first so they don’t all sink to the bottom. Breakfast, dessert, honestly whenever.

Angel Food Cake with Raspberry Cream
Light as a cloud and piled with raspberry cream, this is summer on a fork. The secret to a tall angel food cake is to NOT grease the pan, the batter needs to climb the sides, so leave it bare and cool the cake upside down. Then just fold berries into softly whipped cream and go to town.

A celebration cake piled high with all the berries. Perfect for a summer birthday, or any Tuesday that needs a little confetti. Pat the berries dry before they go on so they don’t bleed into the frosting.
