Roasted Apricot Breakfast

Mornings that look this apricot-sweet and cherry-studded are lovely indeed… especially since summer is just starting to really show off.

We’re in the middle of a holiday weekend here, so it seems like we should all just take it easy on the breakfast front.  Let’s mellow out, roast our fruit, and serve it with sweet yogurt and crunchy granola.

It’s called LIVING, and we’re really good at it.

If you see a giant orange cat eating your breakfast… ugh.  I’m sorry.  I understand.

Summer breakfast should be easy.  Fresh fruit does most of the work for us.

Here’s how it works:

Turn the oven on to broil.  It’s hot.  We’ll only broil for a bit.  Slice a few apricots in half and sprinkle the cut-side with a bit of granulated sugar.  Throw (not literally) the apricots onto a sheet pan and place them under the broiler.  Loiter around the oven for a few minutes while the apricots roast.  Remove the apricots when they’re browned and bubbled a bit.

Place a few big spoonfuls of sweet yogurt atop a small plate.  Top with warm roasted apricots and sprinkle generously with granola.  Add fresh cherries and enjoy!

  3. How fortuitous, I just bought apricots at the grocery store. About cats, I’ve learned the hard way I should not leave soup bowls on the floor. My cat will lick it clean and then throw up somewhere, I usually find it after stepping in it.

  5. I love roasting (well, broiling too) fruit before using it in ice cream. It just intensifies the flavors and lowers the water content, making the ice cream that much more creamy and delicious.

    Last year I made a roasted peach ice cream pie based on the roasted strawberry ice cream in Jeni’s ice cream book. I haven’t tried this technique for breakfast, but now I really want to.

I’ve been trying to figure out what to add to some of the boring, practical registry gifts that I’ve been avoiding buying and after watching the sugar cookies I made using your recipe (cut into bunny and elephant shapes) be devoured insanely fast, it hit me! Her fiance is in the air force and is being stationed in Mississippi- far away from anyone they know- so I was trying to think of something comforting and what is more comforting than cookies? I spend a lot of time making your recipes and listening to your podcast like a crazy person while I’m sitting in my cube and you and Tracy make it much more bearable.. so why not spread the Joy the Baker love?

    Also, you should know that I listened to the red flag podcast recently and it was a game changer. Sometimes you just need a ridiculous podcast to see relationship red flags everywhere I suppose!

Sorry…I had to whore you out to my dear constant readers after attempting to hail you as one of my blogging heroines after your 32nd birthday post and ending up revealing a terrifying secret to Morguefiles in order to try to find a simple pastel heart. The end result is never to be spoken of again but a lot of them meandered over here in order to see what had taken posession of my senses…sorry about that.     Just LAST NIGHT my husband and I roasted apricots on the grill and served them with yogurt and honey for dessert. (Obviously this dessert was inspired by a post from way back in June of 2011. And then you post this the very next day?!? *insert happy dance here*

    I almost spit coffee at my computer when I read “throw (not literally) the apricots on a sheet pan.” I pictured you doing it literally. Hilarious.

  12. My cat is always all up in my business! This morning I made a smoothie, left it on the counter for like 1 minute, and she had her paws dipped in it like it was hers! The nerve…this looks lovely joy! Happy summer :)
