I’m sure there’s an alternate universe where another version of myself is perpetually 28 years old, eating chili cheese fries and Oreo cookies for as many meals as she’d like without consequence. I’m actually not at all sure of this alternate universe but boy am I hopeful. I’m out there somewhere living my best, most chili-cheesed life…. please.
These treats are a direct reflection of what I want to eat these days.
Also on my To Make list is a lovely raw soup from the new Tartine All Day cookbook that consists of raw parsley and cilantro and avocado and cucumber and other greed good-for-yous that I can bear to mention right now. I looked at that recipe with respect and adoration and headed straight for the marshmallows and cookies. That’s just how some days go down.
It’s simple- this makes me deeply happy. I’ll get to the green stuff, sooner than later, but definitely later.
Here’s how these treats start:
- a box of rice cereal
- marshmallows to melt
- butter, browned to golden and flavorful
- salt, for balance
- and Oreo cookies, crushed and crumbled and snacked on.
See those brown butter specs mixed into the marshmallow? You know that saying “everything happens for a reason”? I think this is what they were talking about. This and only this.
To the large pot of melted, buttery marshmallow we’ll add cereal and cookies.
Salt too. I like to add a good dose of coarse sea salt.
Toss until all of the dry bits are coated in the wet bites. Part of the science of baking.
Press into a well buttered pan and top with more cookies just because you can.
The first bite will be crunchy and chewy. With that familiar marshmallow stick and give. A hint of salt. A dash of very dark chocolate. Everything is really very fine.

Ingredients
- 12 ounces (1 box) rice krispie cold cereal
- 16 ounce bag large or small marshmallows
- 8 tablespoons unsalted butter, melted to browned
- 1 teaspoon coarse sea salt
- 16 Oreo cookies, chopped and crushed
Instructions
- Place the rice krispies in a very large bowl. Set aside.
- Butter a 9×13-inch pan. Set aside.
- In a medium saucepan, melt together the marshmallows and butter. Stir as the mixture melts until thoroughly combined.
- Pour the melted marshmallow mixture over the rice krispies. Sprinkle in most of the salt. Stir until all of the cereal is coated in marshmallow. Add most of the chopped cookies.
- To make pressing the mixture into the prepared pan easier, grease your wooden spoon (even if it’s covered in sticky rice krispie treats) with butter.
- Press into the pan. Sprinkle with remaining salt and cookies and use your fingers to press them into the treats.
- Allow treats to rest in the refrigerator for at least 30 minutes before slicing. This will make the treats easier to slice and handle.
- Wrap individually, share, and enjoy!

These look delicious. I love that description at the end about the first bite etc, it makes me feel like I’m eating them right now. Can’t wait to make them on the weekend.
made these on vacation as a treat for the kids. the browned butter/cookies & cream was a twist i thought the adults would appreciate. over all they were good and by the end of the week had been eaten entirely, but i would not make again without tweaking the recipe. three simple things: 1) half the salt (mainly for the kids, but even i, who loves salty/sweet, thought it was borderline). 2) less krispies (they turned out a bit dry as the marshmallows + butter was barely enough for the amount of krispies called for. i definitely prefer a chewier treat. i’d take out a cup or more to start, you can always add more in if desired). 3) 2x more cookies (the one time i had cookies & cream krispie treats they had much more cookies than these and it was amaze. i actually couldn’t taste the cookies very much in these).

Kellogg’s Rice Krispies are not gluten free, because of the malt it contains. So if someone is making this for a person with Celiacs, they should probably pick a different brand. The recipe looks super yummy though!
Yum! Great way to update such a retro dessert. Growing up my mom ALWAYS made rice krispy treats for 4th of July and pretty much all of the summer parties. Can’t wait to give this a shot!

Today is my first day of maternity leave and these seemed like a good way to celebrate. They’re SO tasty and the browned butter is everything (admittedly I referred to your browning butter 101 post prior to making them). It is going to be dangerous having them in the house with me!

I love Rice Krispie treats of all kinds, so was so excited to try these! My only suggestion would be to back off the Rice Krispie’s if you don’t like really crunchy treats. The flavor was delicious, but I like a little more chewy texture. I tried the recipe again with 10 cups of cereal and they were great for a chewier texture. Just wanted to throw that out there if there was anyone else like me :) they are kind of like cookies, everybody likes something a little different.

Oh my gosh this looks simply amazing. I’ve never made rice krispy treats myself (I’m concerned about the cleanup aspect) but this might cause me to change my mind. Brown butter? YUM. Oreos? HELL YES.

These are a wonderful idea! I finally have a use for the oreos I’ve been saving!
Omg these look amazing! I just made Deb’s brown butter rice krispie treats on the weekend and will admit I put chia seeds in them so that I could pawn them off on my daughter as a healthy treat (surprisingly good and I didn’t feel so guilty that we ate the whole pan in a day). But these will definitely not be getting the chia seed treatment when I make them as they look completely decadent :)
