Let It Be Thursday

Happy Thursday, my friends!  The closer we get to the weekend, the more I find myself slouched at my computer staring at the screen.  Procrastination is powerful.  Because the Let It Be Sunday posts are my favorite to write and share each week, I thought I’d pop in with a mid-ish week list roundup.  While we’re staring blankly at our screens in a procrastination trance, we might as well click off Facebook and read a few clever things.  These are them:  

First, it’s candy corn season.  BE CAREFUL! 

•  I’ll be at the Baltimore Book Festival this weekend!  I’ll be signing books and showing you how to make a pie on Sunday 9/27 at 1pm.  It’s free to come!  I hope to see you there.  Seriously.  Come say hi! 

•  Is Mercury in retrograde OR WHAT!?  I just googled ‘what to do when mercury is in retrograde’.  How to survive Mercury Retrograde.  I did.  I really did that. 

•  You don’t have to tell me.  I have a problem with typos.  It’s terrible.  Here’s why it’s so hard to catch your own typos.  No excuses… I’m just sayin’.  

•  How To Lose Weight in 4 Easy Steps.  Portion control, fruit juice, smash your heart on the floor.  You know… 

•  Read this, oh read this:  The Sanitized Stories We Tell.  ‘If we don’t deal with our trauma, our trauma begins to deal with us.’

•  I just bought a bunch of sour candy.  Be like me.  

•  Welcome to the world of really chic, super comfortable house/sleepwear!  This feels good, real good:  Lunya!  

•  It.  Is.  Time.  Pumpkin Pecan Scones with Brown Butter Glaze.  Sorry.  

Have a happy Thursday.  Fun is over.  Time to get back to work!

    Bonus! Let it Be is the first thing I read when lazing on Sunday, so excited to get this one mid week. I just found it on Saturday afternoon but I am going to wait until I can give it due focus tomorrow. Thanks for your blog–I appreciate it!

    About the typos – do you use Grammarly? I added it to my browser during my master’s degree program for online posts and now it’s one of my favorite things ever… it integrates to any online text box and suggests corrections for spelling, grammar and passive voice.

    Also, thank you for the Mercury in Retrograde article… this Virgo has a new understanding of a few things :)

    Wait, this is amazing. These posts are my favorites and I just clicked back here in hopes that I somehow hadn’t read last Sunday’s even though I knew that I had. I’ve done so much procrastinating that I’m about to lose my mind, so naturally I started to go with delusional thinking. But no! A post on Thursday! What a perfect little gift, thank you.

I don’t know what it is about this year, but I j I don’t know what it is about this year, but I just need more light-hearted fun, more hugs, more breakfast made by mom, and more coffee walks in the sand. Let’s do autumn now, nice and steady.
🥯🥯 for the weekend, babes! Save this no-yeas 🥯🥯 for the weekend, babes! Save this no-yeast bagel magic for your Sunday morning. ⁣
⁣⁣
Two Easy No-Yeast Bagels⁣⁣
1/2 cup self-rising flour⁣⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)⁣
1 large egg, beaten for egg wash⁣⁣
1/3 - 1/2 cup grated gouda or gruyere⁣⁣
Everything bagel seasoning⁣⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣⁣
⁣⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣⁣
⁣⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣⁣
⁣⁣
Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣⁣
⁣⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣⁣
⁣⁣
Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
